Brilliant recipe! That´s just how I ate them many times when i lived in Spain. I also never used any garlic dip for the fish, just a lemon wedge is perfect. Maybe you can add some rosemary, but that´s up to taste.

These look good, usually have a starter dish of whitebait at one of the restaurant we go to, these look similar just a little bit bigger. Sounds like a nice dish to try with any of the varieties of fish you mentioned, like the shallow fry method rather than deep frying, only because of the quantity of oil hanging around afterwards. The anchovies you heard about are probably from a tin, and they can be quite salty but they are delicious too! These ones are totally different than you will taste when you get them from a tin. You can eat the tail if you want! Thanks Kelly :)

Hi Bart, looking good again..:-) I have a question. I never clean my Anchovies; it means I wash them upfront , dry them in paper towel but pan fry them whole. So with the head and the guts and the bones. It does not bother me at all with these tiny fish.;. well really I do not want to de-gut them. Is that a bad thing ; eating them whole..?

I think this looks amazing! But wouldn't it be best if you had used a garlic clove (skin on) to flavour the oil, instead of adding slices that would over-cooked (and become bitter) pretty easily? In any case, white-bait looks delicious, and your recipes are always simple and inspiring.

Your portion sizes are very little , I'm from Turkey and this dish is so common in blacksea region without the garlic chips and one person can eat 250-400 gr of that fish in every meal
