granulated sugar and lemon juice on pancakes (and fresh cos lettuce leaves) when I was a kid. But the pancakes we made were not those thick things you are making there that look like scotch pancakes. Ours were more like thicker crepes, with that sort of texture. That's what my (very) English grannies used to call pancakes.

My younger sister had dyslexia. I read her books to her all the to high school. I asked her if she was having problems with math she said no. One day while she was in high school I saw a book of unsolvable theorems on her bed. I asked her if she could solve them she said yes and she found an error in the book. As it turns out my sister was a math savant.

I just recently finished recipe testing pancakes too. this was my favourite: 1kg flour, 10g salt, 500g sugar, 40g baking powder, 10g baking soda, 8x size 7 eggs whole, 200g melted butter, 200g canola oil, 1200g buttermilk. 1. mix wet together, 2. mix and sieve dry together, 3. make a well in dry and add all of wet, 4. mix until just combine but still slightly lumpy. 5. cook with clarified butter

When I was a primary school teacher I had a student with dyslexia in my very first class. In my first day, several other kids told me (out loud in front of everyone) that this girl wouldn’t ever be able to answer a question or write properly, so not to bother asking her any questions or setting her work. 😢 Naturally the little girl was very embarrassed. By year’s end, this girl had become so much more confident and happy and relaxed in class, regularly answering questions and succeeding in her written work. In my experience, all she needed was patience, kindness, and options for doing things slightly differently in a more dyslexia friendly fashion! ❤
