INGREDIENTS (SERVES 4)
tomato sauce (purée + some blended whole canned tomatoes): 700 g
guanciale: 200 g; from Amatrice, if you can find it.
pecorino romano cheese: 100g (or Pecorino Amatrice, if you can find it)
onion: 100g; minced; optional but we highly recommend!
red chili pepper: to taste (1/4 - 1/2 tsp)
spaghetti, bucatini or tonnarelli: 400g
