Today we're making Pasta alla Boscaiola otherwise known as Woodsman style pasta. There are many ways to make this recipe but I especially love it with rosemary. It has sausage, onions, garlic, and lots of mushrooms in a delicious cream sauce. Enjoy!

PASTA ALLA BOSCAIOLA PRINT RECIPE:

INGREDIENTS WITH GRAM AMOUNTS
1 pound (454 grams) rigatoni or penne, paccheri, etc
¼ cup (54 grams) extra virgin olive oil
¾ pound (340 grams) bulk Italian sausage
1 pound (454 grams) cremini mushrooms - sliced
1 ounce (28 grams) dried porcini mushrooms reconstituted in hot water then squeezed out and chopped
1 medium onion - diced
2 tablespoons fresh rosemary leaves - chopped
5 cloves garlic - sliced
¾ cup (170 grams) dry white wine
14 ounces (396 grams) crushed plum tomatoes
¾ cup (180 grams) heavy cream
½ cup (45 grams) Parmigiano Reggiano - grated
¼ cup flat-leaf parsley
2 cups (400 grams) reserved pasta water - will not need it all

You should never use non stick pans,PFAS forever chemicals are horrible for human health Enameled cast iron is probably the best non toxic option

Sometimes when I feel somewhat anxious, this channel is what I like to watch: simple, soothing, rhythmic, no gimmicks or loud flashing things - just delicious food presented in an accessible and friendly way. Keep it up, this is awesome!!

This reminds me of the best quiche I’ve ever had. I told our server “This tastes like the forest!” They looked appalled. And I was like “No no! In the best way possible!” The next week, it was on the main menu as THE FORESTER🤣🥰

Sitting at home in Denmark, watching probably my 100th video of yours is a testament to your great work in many ways. We are so far apart geologically and culturally, but you bring something everyone needs with their cooking. Namely, enjoy the little things, do things your own way and share it with people you love. @@katherineharra8434 Yeah, a lot actually. But in a very danish way. We boil and strain our pasta and put it back in the pot with a lid on it. And then at dinner table, each person takes whatever amount of pasta they want and put sauce on top. 2 things happen. The pasta becomes clumby and the sauce is watery. Not pleasant. I dont do it anymore, and this is in large parts due to KZbin cooking videos :).

Im Danish aswell and my fav pasta dish is Cacio e pepe with 50/50 parma, pecorino no cream just the pasta water and hard cheese emulsion with the startch and some butter. Pasta is not just an Italian thing, cooking is universal and something everyone can learn if they want. This dish looks comfy and hygge , very autmn october dish with the shrooms, maybe some pancetta for more taste in terms of meats.

I love that your family is so honest in their reviews, and don’t just rave that OMG THIS IS THE BEST (fill in the blank) IVE EVER HAD! So many channels try to attract viewers with over the top antics and strained efforts to be hilarious that just come off as cringey. All three of you come off as a nice family, naturally chill, sharing good food. And as many have posted before, you come across as a very good teacher and “explainer”. I continue to really enjoy your channel very much! (And I continue to lobby for an episode of you and James cooking together!)

I made this tonight from the written recipe, which is just a touch different from the video but close enough. I used whole plum tomatoes and crushed them by hand, that way you get bits of tomato which gives the dish a little more texture. Didn't need any pasta water - it was perfect. This recipe tasted like the pasta dishes we had traveling through the hills of Tuscany where everyone cooks with rosemary. Really wonderful!!

I just made this recipe and it’s hands down one of the best pasta dishes I’ve had in a long time! Didn’t have any white wine so I substituted with Rosé. I was sceptical about the rosemary because I don’t often cook with it, but it works well with this dish

I made this today. It was a huge hit with my three friends. All of us have had the good fortune to spend a bit of time in Italy. I used paccheri which captured some of the sausage with each bite. I forgot to toss in the parsley I had chopped, but nobody knew it was supposed to be added. Some pepperoncini gave a nice little heat. I very much enjoy your channel.

I love this channel because it keeps things simple and relatable. I visited Italy a few years ago for the first time and tried to eat and try out as much of the local flavours as I could, stuff that I’d never see at home. There were two dishes that were simply unforgettable, ravioli stuffed with pumpkin and squid-ink pasta that I had in Venice. I wish I knew how to recreate those dishes 🤤🤤

I can honestly say that I've somewhat subscribed or followed dozens of of recipe channels over the years. Fantastic dish! I followed the recipe completely and it was amazing. It's hearty and it's a nice change of pace to have a weeknight go-to pasta without a red sauce. Super easy, limited ingredients, and comes together really fast. This will be in my regular rotation.

Cozy fall vibes and Sip and Feast comfort food pastas...my favorite. It's true, I've never heard of that pasta, but I love the concept. If you have an Aldi near you, try their sausage patties and break 'em up to use in this dish. They're very nicely seasoned and delicious! I want to make this dish, I love mushrooms!

I’ve lost count of how many times your videos have led to delicious dinners, but man oh man this was so good! That rosemary! We found the same dried mushrooms at Costco … I can see getting a lot of use out of those. In general, being based in CT, I really appreciate your videos since I can usually find the exact products. And of course the recipes are consistently delicious and clearly explained. Much appreciated!

About every 2 months we celebrate "International Day" wherein my niece cooks a big meal from a country we choose by pulling out names from a hat. Yesterday was Italian day and we (she mostly) prepared this meal as the entre. It was terrific and we loved it. Thank you so much.

I’ve only recently come across your channel but there are several things that I feel the need to comment on: 1. LOVE the way that you are teaching your son how to taste & appreciate food, identify ingredients & understand what he likes about what he’s eating 2. Your easygoing manner whilst demonstrating the recipes - it’s not condescending, thereby engaging with your viewers (regardless of their culinary proficiency) 3. Your obvious love of the recipes, ingredients, how food should make the eater feel, why you do certain things (e.g. adding a little salt to the veggies whilst frying, to draw out their water, to enhance their flavours) - it’s all so brilliantly engaging I look forward to watching your back catalogue to see what new recipes I can find👍🏼

The cooking technique of mise en place, or as you put it, preparing all your ingredients in advance, took my cooking up several steps, and is the one thing I tell friends when they ask me about cooking better.

I made this for my wife for a special occasion, but I used hot Italian sausage; pecorino romano; pinot grigio; a blend of crimini, shiitake, and oyster mushrooms; and homemade pasta (kind of a cross between orecchiette and cavatelli ); served up with a really nice dry red. I'm not much on measuring things, so I generally just wing it with the relative amounts of each ingredient. We really enjoyed it! The ingredients mesh together nicely, there's no flavor that's too far out in front of the others -- in all, a wonderful dish. You really hit it out of the park on this one!

You know what's great about this meal: customization and simplicity. I made something similar just with some left-overs. Use ground beef instead of sausage. I like my sauce thick so I didn't use any pasta water. Super simple that even a very mediocre cook like myself can make it!

America’s Test Kitchen has a great trick for cooking mushrooms in a way that they won’t soak up all the fat; you start them in a cold pan with water. The water heats them up until their cell walls break down and they release their water, then you can add fat to the pan to help sear them. Just an FYI. Been fun watching your videos.

Made this last night with bacon instead of sausage. Drained off most of the bacon grease and only needed to use a small portion of it to cook the mushrooms. Delicious! Thank you!

Such a great channel. So many recipes I forgot about. Growing up in an Italian family and my uncle had a restaurant once I became an adult I kinda went my own way as a cook and moved away from my roots because it’s what I ate EVERY DAY and I got sick of it. I make more Asian food than I do Italian now and your channel is really inspiring me to go back to my roots.

I am Korean-Australian who currently lives in Japan and its surprising how few people here understand pasta besides 3-4 sauces (shoyu/soy sauce and butter, aglio e olio, bolognese and ebi cream. I lived in a very Italian dominated area, mainly northern Tuscans so boscaiola has always been my favourite food since I was very young.

I’m going to make a vegan version with coconut milk instead of cream and the beyond meat Italian sausage. another way to add some extra oomph to help if the sausage flavor isn’t coming through could be adding a pinch of fennel, since that’s a common Italian sausage component. loved the taste testers!

Made this tonight for Sunday dinner and didn’t change a thing except I used a full pound of sausage. Came out fantastic! Light rosemary taste, which is an herb I never would have considered using had it not been for this recipe…really enjoyed it. Excellent recipe. Thanks Chef!

I'm whip this one up but going to double or even triple the sausage I bet hot sausage could be a nice touch on this as well ,I'm going to try it both ways , I'm going to make one with hot sausage and one with regular sausage for football this Sunday,but your wife gave a good suggestion on turn it into a pasta bake hit it with some of the cheese and pop that bad boy in the oven be a good way to repurpose the leftovers if you have any.

Awesome recipe and really sweet, heartwarming moment when your family tasted the dish. The love in your eyes when each of them was tasting and describing the dish was palpable and deeply moving. The only thing better than good cooking is good cooking done by good people. Cooking is a love language.

Firstly, Thanks for continuing to make these videos. I've added quite a few to my list to try to make at some point when my school semester ends and I have free time. I love the variety of pasta dishes you put on this channel and the sort of "laid-back home chef" vibe that comes through from the music. Cooking should first be delicious, and as a close second FUN (because clean-up sucks). Secondly, It occurred to me as I ate dinner while watching this video, that there's not alot of dishes involving sea food which struck me as odd but understandable, given the price of seafood these days. I hope you and Mama and James keep making vids, they're entertaining and the food looks so mouthwatering good on the camera. Thanks again!

#1 LOVE your family ... a joy to see the taste testing and how everyone cares for each other ... I know it is KZbin but I think your hearts shine through. #2 The recipes and methods: prepping ingredients at the start ... for me, this allows me to see quickly if I have what I need to make the dish. #3 Easy to follow methods. I am an experienced cook and baker but still ... just the right amount of detail for a new OR experienced cook. I'm new to the channel but I have made the lemon-chicken-orzo soup and the pepper beef stew: loved both. I agree that this would be a great baked dish as well. For the sausage. Not too long ago on a goofy TikTok I saw someone using a tool that looks kind of like the back of a jet. I bought one: OXO ground meat chopper. Game changer for bulk sausage, ground chicken or turkey. The OXO is silicone so ok for non-stick as well. Finally, thanks for the heads up for ButcherBox! I took a look and signed up.

Made this the day after watching this video…..Love it, I went a smidge heavier on the Italian sausage upping it to a pound. It’s a great comfort food dish and I’m a fanatic about Italian dishes overall. Thank you for making such awesome, hearty Italian dishes. This is our new favorite winter/ fall pasta dish! I’m always looking for hearty pasta dishes for my wife (who loves pasta, but refrains from eating meat). I eliminated the sausage, but added black truffles and some of the truffle oil and used the soaking liquid from the porcini mushrooms to extend the sauce instead of plain pasta water (which I HIGHLY recommend). ABSOLUTELY FANTASTIC!!!!!
