I continue to be astonished at how many pasta dishes I have never heard of, seen in books or even on menus - and my background is Italian! What a wonderful archive Pasta Grannies is creating. I love these bite-sized (no pun intended) cuisine stories featuring these amazing cooks. I wish I had the idea to travel around Italy documenting grandmothers cooking, I'd love every minute of it! especially the tasting part :-)

@@pastagrannies You're doing a great job trying to record/preserve traditional cultural practices. In a world of standardisation, variety is being lost at an alarming pace. Keep documenting everything. Maybe put everything in a book in the end, with pictures and all.

I Love Irma & her vibrant personality!!! I can’t wait to make her pasta recipe!!! Amazing how she keeps getting that wheel shape of dough with her unique method! Very interesting! My copy of "Pasta Grannies" arrived yesterday. Beautiful book, great recipes, pictures and stories. Not finished it yet, but I have been in the kitchen with it ever since trying out new ideas and I think its improved my pasta making already. Great channel and book, nice to see tradions being saved.

I'm in love with this channel, such that I've already replicated some recipes at home. I've made the lasagna with spinach dough and the schupfnudeln, both of them were slam dunks here. Italian cuisine is a.mixture of simplicity and bold flavors, which appeals to almost all of us.

Wow, I really like the look of this! Definitely going to try this with my homegrown tomatoes! Thank you for all the grannies and recipes. Wonderful channel! 🤝😍💖 Edit two weeks later - so I had enough homegrown tomatoes to make this and it was absolutely delicious. I am definitely going to make this one again. Absolutely restaurant-quality dish. These Grannies amaze me how they manage to pack in so much flavour with such simple ingredients and methods. And yes, I did make the stringozzi! 😂 It didn’t turn out all nice and even like Irma’s but it was still really nice! 😋 And the slap-slapping was fun! 😉😁

Among all the wonderful videos of this channel, this one has striken me in a very strong way, because Irma's way of speaking sounded so familiar, I kept thinking: "Oh my, she speaks just like my aunt and my father!"- and then I googled "Casperia" and I discovered that she is from the same province of my relatives! My father left his hometown more than 40 years ago, but tomorrow I have to call him and ask if he knows the stringozzi!

I suppose, if you start with a smaller ball to make the donut shape in the beginning. I like your idea. It will take some trial and error to make it the individual size.

Ms. Vicky, this wins best recipe of the week on you tube & looks absolutely delicious. I really like those type noodles & have seen chinese noodle makers make them. You'll probably know this, but didn't china bring pasta noodles to italy ?, & then italy took pasta & ran with it making all types of shapes & designs. God bless everyone & please stay safe.

The story of Marco Polo bringing pasta back from China was invented by an advertising company 😊 But the Arabs in Sicily were making and exporting pasta in the 12th century. And you are right about the diversity of pasta shapes being unique to Italy. That is thanks to the mountainous geography and varied dialects of the peninsula. best wishes, Vicky

There is nothing like mama în Italy. She ia an institution. As long as mama remains like that, Italy remains the most beautiful country in the world. I'd like to see and hear more from all Italian mothers! Let them speak, show what they can and how they think. We can learn tremendously much from the Italian mothers!

Pasta making: [EXPERT LEVEL] 🤯 I’m curious, why go to the trouble of keeping it one continuous ringed strand? You’re gonna cut it up to serve it. Either way, you gotta respect the pro techniques here wow.

I know what you mean, but it’s kept in a single loop while making it so because it’s much easier and efficient for the cook. This way, you’re only working on “one” noodle, in a sense. If you aren’t using or don’t have a rolling pin, to make this dish, you’d have to roll out hundreds of individual strands of pasta.
