WHITE SAUCE PASTA
INGREDIENTS FOR THE PASTA :
• 200g pasta (penne)
• Water (enough to boil pasta)
• 1 tbsp olive oil
• 1 tsp salt (for boiling water)
• 1 tsp olive oil (for sprinkling on boiled pasta)
FOR THE WHITE SAUCE :
• 2 tbsp olive oil
• 2 tbsp butter
• 2 tbsp all-purpose flour
• 2 cups milk
• 1 cup grated cheese
• Salt to taste
• 1 tsp sugar
FOR THE VEGGIES :
• 1 tbsp olive oil
• 2 cloves garlic, minced
• 1/2 cup yellow bell pepper, diced
• 1/2 cup corn kernels
• 1/2 cup green bell pepper, diced
• 1/2 cup carrot, diced
• 1/2 cup red bell pepper, diced
FOR SEASONING :
• 1 tsp oregano
• 1 tsp chili flakes
• 1/2 tsp crushed black pepper
METHOD COOK THE PASTA :
• Fill a large saucepan with water and bring it to a boil.
• Add 1 tbsp olive oil and 1 tsp salt to the boiling water.
• Add penne pasta to the boiling water and cook until it is half-cooked (al dente). This usually takes about 6-7 minutes.
• Drain the pasta and set it aside. Sprinkle 1 tsp olive oil on the boiled pasta to prevent sticking.
PREPARE THE WHITE SAUCE :
• In a large skillet or saucepan, heat 2 tbsp olive oil and 2 tbsp butter over medium heat.
• Once the butter is melted, add 2 tbsp flour and whisk continuously for 1-2 minutes until it forms a smooth paste (roux).
• Gradually pour in 2 cups milk while whisking constantly to avoid lumps. Add 1 cup grated cheese and continue whisking.
• Add salt to taste and 1 tsp sugar. Keep whisking until the sauce starts to thicken, about 5-7 minutes.
PREPARE THE VEGGIES :
• In another pan, heat 1 tbsp olive oil over medium heat.
• Add minced garlic, yellow bell pepper, corn, green bell pepper, carrot, and red bell pepper. Sauté for 3-4 minutes until the veggies are slightly tender but still crisp.
• To the sautéed veggies, add 1 tsp oregano, 1 tsp chili flakes, and 1/2 tsp crushed black pepper. Mix well.
• Pour the prepared white sauce into the pan with the veggies. Mix well to combine.
• Add the cooked pasta to the skillet with the white sauce and veggies. Toss gently until the pasta is well coated with the sauce.
• Serve white sauce pasta hot, garnished with extra cheese and herbs if desired.
