These ricotta ravioli are filled with ricotta and parmesan, and served with a mixed meat, tomato sauce. They are called cargiú around the town of Cingoli, and Lina's grandchildren love them!
for the pasta: 400g 00 flour, 4 eggs, a teaspoon of oil (optional), pinch of salt
for the filling: 400g ricotta, 100g parmigiano cheese, 2 eggs, salt, nutmeg black pepper
for the ragu: one onion, one carrot, one celery stick diced together, 250g minced steak, 200g diced rabbit (or chicken, or pork), 2 tins plum tomatoes, 75ml white wine, salt, basil leaves

I think it's great that the families, in this case the grandchildren, see their grandmother getting attention for her cooking skills. This is wonderful!

"Boneless rabbit" - that's what you call a floppy bunny! This must be a very interesting and savoury mix of flavours, I think. I especially like how the elder child was allowed to consult and give feedback/learn by taste even with the camera crew there, and hope the younger one gets to do so in future so that he can make great pasta too.

hi James, in Macerata province the addition of 'courtyard' animals to a ragú (rabbit, duck, chicken, goose) is commonplace. I had a neighbour who used to dispatch one for the pot once a week! best wishes Vicky

Thank you Lina, that ravioli looks absolutely delicious. How wonderful it would be if we could buy such great produce here in the uk. Boneless rabbit how incredible. I think also the amount of cheese puts pay to the medical worlds quote that we shouldn't eat so much cheese etc. I think they can thumb their noses at that one, the more the merrier ! Ooooh, that looks sooooo good. Nice dark sauce that I love, good size ravs, but I sensed the dough was dry by the sound it made on the board. She didn’t even moisten the pasta edges!! And they stayed together. I guess it’s years of experience. I got tired just watching her work the dough. But they are the masters.

hi John, make then knead the dough takes around 15 minutes; leave it to rest is a minimum of 30 minutes; rolling it out takes about 20 minutes, making the ravioli another 20 minutes. The meat ragú should simmer for 45minutes to an hour. best wishes, Vicky

That's probably Tipo 00, but All Purpose works fine. Egg pasta isn't very fussy.

My Italian is poor (non existent, lol), so I rely on subtitles. If I'm honest, I'm struggling with the subtitles being in white. Anyone else?

Which color would you have preferred ? Of course then it also depends on the images of the video on which the subtitles are on at that time. PS: Me being Italian, I don't have these problems, but I also read them to see if they translate well. Because often the translation is not so faithful to what the grandmothers say in the videos.

@@aris1956 I specifically didnt mention a colour because it can vary depending on the viewer. If you notice, I also asked who else was having problems, rather than expecting the subtitles to be changed just for me. Personally I struggle with white subtitles where most of the Grannies are using white based aprons and/or white based tablecloths. Some situations also have a black background, so black subtitles would also not help. Personally, blue subtitles would work *for me* but as I stated earlier, I was asking who else had issues. AA or AAA guidance on Website accessibility can be useful, but can increase production costs, which is not what I;m aiming for

hi Sorcha, yes subtitles are a conundrum: we add a black edge to the subtitles to try and make them more clear. If we make them with a black font it doesn't help (we've experimented) and making a black strip with white lettering obscures the action. I also had an experiment where the audience could choose to turn on the closed captions - which 40% of viewers didn't know how to do, so that didn't work either! There is no easy answer, but if you have other suggestions I'm happy to hear them. best wishes, Vicky

Hi Aris, funnily enough subtitles take up quite a lot of editing time. Italian is longer than English and there is only so much space at the bottom of the page before the words start intruding on the action. Translating the sense not the actual words is sometimes necessary. And then there is the challenge of dialect, strange words and so on. We often refer back to the families for a translation and Livia always checks what I've done. Thus, we try 😅 best wishes, Vicky
