We made Pastrami with ground beef but also with mixed minced meat. To 3 kilos of ground beef, we added half a kilo of pork fat. We also added 20g paprika, 10g allspice, 20g curry, 20g black pepper, 25g red pepper, 20g fenugreek (special spice for Pastrami), 85g salt, 50g cumin (artichoke), 80g grated garlic and 900 ml water. We also used about 40g of pork intestines.
In addition to a mixture of 1500g minced pork + 750g ground beef + 750g lamb minced meat + 500g pork fat, we added 20g paprika, 10g spice, 20g curry, 20g black pepper, 25g red pepper, 20g cement, 85g salt, 50g cumin (80g), and grated garlic and 750 ml of water.
