I just feel she makes tempering chocolate so much harder than it needs to be... melt chocolate, seed the molten chocolate with chocolate callets until you're at the right temperature, done perfectly tempered chocolate. Why does it work? Because callets already have the required crystals in them and they multiply in the chocolate you add them to.

For what it's worth, I remember having a biology professor tell me that the innermost layer of the candy coating of M&Ms is actually diatom powder used to help the candy adhere to the chocolate and stabilize it like a primer. That's why when you dissolve a M&M it'll still have a thin layer that doesn't melt away with the rest of the candy. EDIT: Also, caranuba wax for the shiny polished surface.

A few airbrushing tips that hopefully might help you, Claire, or anyone else attempting this at home: - Lower the PSI on your compressor when you're using an airbrush. It was way too high from the looks of it, so that's why you got all that overspray going on. If your PSI is too high it will also make it harder for the paint to stick properly to the surface - Have a bit more patience when applying color to something: You kept turning the M&Ms before the paint was dry, so that leads to that uneven coverage you were getting. Do one side, wait for it to dry, then turn them and do the other side. - To get a smooth coverage when you paint, you should apply multiple (hopefully thin) coats of paint. That should cover up the fact that your undercoat (the white sugar coat you had) was uneven Granted, I've never used food paint through an airbrush; these are more from someone who paints with an airbrush so they may not apply at all :) I can't imagine that they wouldn't help, though, so maybe someone will find this useful!

I think the one thing that tends to get forgotten is actually making it gourmet (better), it doesnt need to be a visual replica of the entire product but has the essence of the original and tastes better. Really like the series and how claire is kinda a goofball, just wish it the item was more reinvented to become gourmet

Chris also knows how to give good criticism, as in, tell people what's wrong in a genuinely helpful way. And more importantly he knows when his criticism is helpful, and when it would be destructive, and when to bring the sass. Add in his super pallet and I begin to understand why everyone in the test kitchen respects him and his opinion so much.

As a metallurgy/welding technology student, Claire, I appreciate how difficult tempering is. Tempering metals is incredibly difficllult, I can only imagine how difficult everything is when dealing with food, and chocolate.

I was a chocolatier for s few years before going full time mom. The right equipment makes it super easy, but that sou vide setup isn't that ridiculous. With the bags sealed that way she doesn't have to worry about the other people in the kitchen messing up her temper. It isn't just the pan temperature you need to keep constant, the humidity and room temperature matter a lot. The darker the chocolate is the faster it sets and the more finicky it is. Walking past cooling chocolate with a pot of boiling water in a kitchen can ruin an entire batch. I made chocolate in the dining room while everything else, including drinks, was well away from me.
