Tip: To make meringue, wipe down inside and sides of your bowl with lemon juice, or with vinegar with a paper towel before you place your egg whites in to whip. Works great every time.

Great to see this cake being well-made from scratch. Here in Australia, this is our national dessert, and it is often sold as the completed cake in supermarkets year round, and especially at Easter and Christmas. The store-bought version is nothing like the home made version, which is so much better, and Stephanie has done a great job (as always) although we make them ever-so-slightly differently here, and always with caster sugar (a sugar which is between icing sugar and granulated sugar in fineness).

As an Australian who has laying hens and grows her own berries and passionfruit, this is something I make every summer. We just call it a "pav" here and your recipe is exactly the same as my mum's. I am watching your videos since quite a while and a very impressed with your skills and aptitude to explain every step. You are a very good 🤓 I also appreciate that you take into account that patisserie amateurs ar located all around the world and outside the US we use a scale and not cups and spoons! Pavlova is one of these pastries everybody loves and when you serve it every body goes ohhh and ahhh and think it is sooo difficult to make lol I like to make a well in the meringue before baking and when filling I also add a red berries coulis which then drops along side the "vulcano". One can also make individual pavlovas if abig one should be too large for the number of guests. But I have experienced friends saying: oh just a tiny piece please, and before you know it, the whole pavlova was gone!

Mrs.Stephanie i made pavlova using Aquafava (chickpeap water) and it came out Amazing. Its a Vegan version of this and its surprisingly tasty. I did add a really good vanilla extract and also hazelnut as the bean flavor It's not harsh but it is present! Add cashew cream and fresh fruits!! I hope youll give it a try 😘😘😘❤❤

So very beautifully done! Very iconic in New Zealand and Australia. Aussie usually have it with passion fruit, and Kiwis have it with kiwi fruit (Chinese gooseberry) to cut the sweetness. But those berries look grand too! 😍😍👏👏

Seive the pulp of a passion fruit into the cream (add a few of the seeds too) and then fold sliced sugared Kiwi fruit in and pile that in or on the meringue. The classic pavlova and the best ever, sweet, tangy and scented.

Thank you for saying all the measurements in metric scale as well. Most of the times when I see a baking tutorial on KZbin which I like I give up half way because it's just too confusing to change the units from volume(cups and ounces) to gram (mass) without knowing the density 😒 Like I'm back in physics class!

I live in Phoenix and it was 111 today and very low humidity. It’s a “dry heat”. Do you ever scoop out the meringue top to make an edge to hold the whipped cream? I’ll try this soon.
