Peperonata (pepperonata), a sweet pepper and onion relish with caramelized notes and a jammy consistency! Peperonata is the ultimate add to top your warm bread, sandwiches, eggs or anything you like. Enjoy!
Peperonata
1 Sweet White Onion
3 tablespoons Olive oil
1 tablespoon Chopped Garlic
3 Sweet Bell Peppers, preferable red, orange, and yellow
1 tablespoon Tomato Paste
Salt and Pepper
1/3 cup Golden Raisins, roughly chopped
2 tablespoons White Balsamic Vinegar
Peel and slice the onion into thin half-moons. Place onions and olive oil in a large cold sauté pan, then place on a burner over medium low heat. After 5-10 minutes, add the garlic and adjust heat so onions do not brown.
In the meantime, remove the seeds and ribs from the peppers, then slice into long thin strips. Add the pepper strips, tomato paste, salt and pepper to the onions. Stir to combine and cover. Cook covered over low heat for 45-60 minutes, stirring occasionally. If vegetables look dry, add a tablespoon of water and continue to cook covered.
Off the heat, stir in the raisins and vinegar. Allow mixture to cool, then serve immediately or transfer to a covered jar, and store in the refrigerator for up to two weeks. Enjoy!
