Well explained!! Initially I thought ur video is long but this is what I came for.I have 4 mud pots for various types of cooking and I was waiting to get one for making curd.When My husband got me one,I cleaned it and started making curd.But I see water keep dripping down under the pot.Since it’s a new one,I thought water is leaking like in other pots.Then I kept it in the fridge since curd may get soar when it’s outside for a long time.But I saw water there too.Anyway Finally we got a thick and tasty curd.Its really tasty and had the texture of butter.When breaking 🥥 for cooking,I also save some fiber and use it for washing the pots.Thanks for the information.I just have few questions,plz answer it - 1. Every time when we make the curd,will the pot filters all the water? Is a holder required under the pot or it’s only first time... 2. My mom used to say new curd should be made in a new vessel,not the one from the previous batch.Otherwise there will be a foul smell.I follow this method for the other vessels.Is it fine if the same pot is used for 1 or 2 batches without scrubbing? I can see the curd hardened in my pot. 3. You were saying the curd won’t go soar so no need to keep it inside fridge at all?

@chillyandvanillabyChefKriti5 жыл бұрын
Hi, Thanks for such an awesome video. I have been making Curd for many many years but tried in Mud pot for the first time. However the Curd was not so thick as I had expected, it was considerably free flowing and I could easily pour it into another vessel, which I think should not be the case if set in a Mud pot. Could you please advise what could be the possible reason for the same. I didn't season it with rice water though as I needed the set Curd in a little hurry. Just washed with salt and water. Could that also be the reason? Thanks Kriti

What to do it the pot catches fungi above the milk level. It happened to me. I boiled lemon water in it after washing and rinsing. Is that enough? I live in a cold place. Not much sunshine to dry the pot.
@HappyHomeMakerJayasrecipes5 жыл бұрын
You have done the right thing. Fill the pot with water and vinegar and leave it for a day. Scrub well with any organic dishwasher or gram flour or rice flour. Dry it well and apply vinegar and leave it aside for a few days. If you still see fungus it is better to discard. Otherwise you can use it after cleaning well. Cleaning is the key. Since pots have holes in them curd particles will get lodged in them. Thorough cleaning and drying will prevent fungus.

Natali Nallanthighal Hi Natali, hot milk will kill the lactobacillus bacteria. The trick is to add curd while it is lukewarm and maintain it in lukewarm temperature. You can either keep in an oven with the light on, or inside a casserole, or wrap it in woolen cloth. It will curdle well. Please try and let me know. ☺

Natali Nallanthighal Hi. It usually takes 3 days for me to get proper curd when I use store bought curd as starter. I live in India where the temperature is high. Can understand how it will be there. ☺If possible please get curd from your friends and try the same. Store bought curd is curdled using cultured bacteria.
@sureshwilliams846 жыл бұрын
Natali Nallanthighal hi Natali, I live in UK as well. I use the store bought curd as starter curd. My simple suggestion is, ... boil the store bought milk ( I use Tesco blue lid full fat milk), leave it aside till it’s Luke warm. Then add a teaspoon or tablespoon of store bought yogurt ( depends on the quantity) , mix well and then leave in the oven. Just turn on the oven and the light glows.Place the mixture in the oven for nearly 6 hours. Turn the oven off. But leave the mixture in the oven. Alternatively you can also leave the mixture covered with a lid close to the radiator overnight. I tried both and found the radiator method was great and quick. In oven it takes more than a day.. Hope this helps.

Madam how about boiling the milk in the same pot and then forming curd in the same pot ... is it feasible
@HappyHomeMakerJayasrecipes6 жыл бұрын
Hi. Mud Pots have small holes in them. The circulation of air from outside to inside through those holes keeps things in the pot cool. When you use pots for cooking, the pot will lose its capacity to cool. So curd making pots should never be used for cooking. The taste of curd will not be the same if it is made in a pot used for cooking. Even if you boil milk in another pot and transfer to curd pot, cleaning the milk pot will be a headache. If milk particles get lodged in the holes, pots will start stinking and milk will get spoilt. So I would recommend you to boil milk in normal vessels and make curd in pots. ☺
