Homemade Ginger wine..
Is a medicinal wine, good for winter season.
Any Wine is good, only if consumed in limit.
This video is only for educational purpose..
Ingredients:
Ginger 350g (Indian ginger is best)
Sugar ( white or brown)1 kg
Raisins 250 g
Water 4 litres
Zest & Juice of 2 oranges
Zest & Juice of 2 lemons
Red dry Chillies 3-4
Cloves 8-9
Cinnamon pieces 2-3
Cardamom 3-4
Instant Yeast 1 tsp
Method:
1. Clean, wash and peel the skin of ginger. Chop them into small pieces.
2. In a big pot add Ginger, sugar, raisins, zest of oranges and lemon, red chillies and spices along with water.
3. Boil for 30 minutes and cool completely.
4. Take a sterilised glass bottle and add yeast juice of 2 lemons and oranges. Pour boiled and cooled ginger water, stir well. Make sure there is little space left in the bottle as during fermentation there will be gases releasing.
5. Close the cap & cover the bottle with a cloth and keep in cool & dark place for 21 days stirring once daily at the same time.
6. On 22 nd day, strain the wine and discard the solids.
7. Fill the glass jar again with filtered wine.
8. To get silky texture, add egg white mixed with water and a pinch of salt and keep again covered for 21 more days.
9. Siphon the wine into the storage bottles, discarding the residue.
10. For the best tasting wine keep wine for a year atleast.
11. You can add 1 cap full of brandy to each bottle while bottling the wine. This acts as preservative. This step is optional.
Important Notes:
1. Use sterilised bottles, spatula preferably wooden ( I wash the bottle and spatula with hot water and sundry).
2. You can add more sugar after a week, if you feel sweetness is less.
3. I have used instant yeast, so added directly.
If you using dry active yeast, then activate the yeast and add. Wine yeast is the best for winemaking if you get.
4. You can repeat the adding egg white procedure 2-3 times, to get clear and silky wine faster.
5. Sterilise the vessel and strainer which we use for filtering after 21 days.

It is better to do a primary fermentation for 4-5 days first and then strain it on the 4th or 5th day into a secondary carboy or bottle and fit it with an air lock. This will eliminate the need of opening the bottle and having to stir the contents everyday for 21 days. Nice video 👍

Yes you can use...but sterilised spoon... Everyday use the same spoon..

No colouring added...as it gets older u get good colour and taste..

Boil sugar with lil water,cool and mix with wine and keep for 21 days...

You can reduce little bit sugar if you like sweetless wine, may be around 250 g - 350g... Other sugar is required for the process of fermentation ....

If you don't want to add egg you can avoid it...but wine takes longer time to get clear silky texture...

Normally, the fermentation doesn't smell great... it should be alright by the end of 21 days .

Quicker clarification... Dried eggshells crushed into a powder... stir about a desert spoon full into the plonk. 48 hours should be enough.

Eggshell is made of calcium carbonate. So by logic, calcium carbonate tablets ( the kind people buy from medine stores as calcium tablets for bone health) should do. Would it ?

Yes it does... Almost same as the wines available in the market... I don't have any means to measure accurately..

Egg white is used as fining agent to help settle any fine solids and get a silky texture for the wine

In wine making process it is important to use all the utensils including bottle, spoon to stir everyday to be sterilised... Also to close the lid tightly... May be somewhere something went wrong ...

The raw egg doesn't mix with the wine.... It will settle down along with all the particles which make the wine cloudy.. then you can siphon the clear wine out to the bottle and discard the settled thick liquid
