This is such a beautiful and easy to follow recipe. Not to mention great tasting too. You are right about the poured fondant glaze which makes the cake so sweet and almost inedible. I made these for our daughter's wedding shower. It was an Alice In Wonderland themed party so I piped Eat Me on them in royal icing. Hi Stephanie. Just want you to know this recipe was perfect for my Italian Rainbow Cookies. Dense with the delicious almond flavor. I baked it in my Nordic Ware jelly roll pan. 1 recipe makes a nice full pan. Italian Rainbow 🌈 Cookies has 3 layers. I baked 3 separate recipe. 1st tray with no color, 2nd tray colored it red and the 3rd tray colored it green. Omg I am so happy with the result and it’s so easy to make. The filling I used was apricot since this is the traditional jam ( or whatever is preferred). I made enough for 250 people for a church Christmas party. The traditional Italian Cookie recipe calls for 2 cups of all purpose flour while your recipe is only 2/3 cup. Almond paste that is used for the traditional IRC calls for 8oz almond paste and your recipe uses 2/3 lb per recipe. Less flour made the finished petit four chewier. I also make my almond paste and marzipan and the recipe is courtesy Kimberly of the Daring Gourmet. Her almond horn recipe is also excellent . Thank you for posting your recipe ingredients both in weights and volume. I always weigh all my ingredients. You save me time from calculating and converting the measurements. I’ll be making 3 more of your bar recipes for the same party (December 22, 2019j.

I've not yet come across a demo video where the presenter is so facile with both imperial and metric weight and volumes. It's like you're speaking fluently in both languages, but it's not as clunky as some who have to write it down or give on-the-fly approximations. As a baker still using both imperial volumes and metric weights regularly, I do appreciate the consideration.

When you are pouring the chocolate you might put another measuring cup under to catch the drippings then use the poured into cup to pour over the other cakes. Less cleaning of the pan and little wasted from the overflow. The entire recipe is soothing for some reason.

Oh Stephanie! Thanks so much for making this video! I did it with a little extra chocolate cake batter, poured my layer a little too thick and since it was store bought, it must have had some baking powder in it. Anyway, it rose a little too high, but I practiced on it, with your method of stacking layers using parchment. I used Seville orange marmalade and topped it with Amarena Fabri Italian Cherries in syrup, and OH BOY! Thanks so much! You are an excellent teacher! Happy New Year

Joy of Baking So, I made these yesterday for a baby shower this morning. The white chocolate glaze did not work out for us and we unfortunately blew through a lot of Callebaut trying to make it work. We finally just coated in straight melted white chocolate and they turned out just darling. Do you think you could specify the brand/type of white chocolate you used in the recipe? I may should just bite the bullet and dive into the scary world of tempering chocolate!

Yes, white chocolate is more a cream color than white. I’ve read you can add food coloring to white chocolate but I’ve never actually tried it.

Great video! It was , however, difficult to see the very pale decorations. I know it’s a choice. One quick question - is there any alternative to use in place of the marzipan? Many individuals have nut allergies (mainly peanut, but nonetheless, they cannot have any nut product) so what would you use or suggest as a replacement.
