I grew up playing piano and went to the Royal College of Music in London but the theory part I always struggled with. I love playing but HATED theory, always my downfall. Glad to have found your channel.

So when playing in the key of C for example, the I, IV, and V chords are the primary ones, but you wouldn’t play a chord progression in the root positions for these chords right? Wouldn’t you have to move some notes down an octave in IV and V so you don’t have to make big jumps with your hand? That’s the challenging part for me...

Totally up to you! I quite like root position chords and use them the most often. But most lesson books do use inversions to avoid jumping. Either way works!

I suppose from your great lessons I have to assume that I can change chords to make them easier for me to play, whether it be in root position or inversions. Is that correct?

You're in the right place! Most hymns only use the primary chords (I, IV, and V) so just make sure to practice those!
