I would leave the tahini out in that recipe - maybe up the mustard or use another type of mustard.

I started plant based and its no more expensive then meat. In fact right now it's a little cheaper.. because I'm not buying nuts since I'm diabetic nuts and fat makes insulin not work as well. So no avacado either. My fiance still eats meat though so grocery bill is the same as it was when we both ate meat.

Chef AJ, my son is going to graduate high school this year. He likes to cook and I have been looking at the possibility of a culinary school for him. However, I am not having any luck finding one that will not require him to cook with meat, dairy, eggs, sugar and oil. Do you have any recommendations? Maybe someone you interviewed at a school, etc. Thanks so much!

Eating plant based is the cheapest way to eat. People kill me when they say it’s expensive!!! Rice, beans, potatoes, corn, bagged spinach and salad mixes, frozen vegetables. Find some homemade dressings and sauces you enjoy and you are set. Not expensive at all.

I love my local ethnic stores. I have so many to choose from in the denver metro. You are right Chef AJ, the prices can be very reasonable, and at some of them, the fresh vegetable variety is also unmatched.
