I don't think I am ready to give up meat completely, but I would like to include more vegetables and legumes into my diet and the fact that I have recently become lactose intollerant has given me an extra push to explore different recipes. I have a question about the Tahini soy dressing: do you have any ideas about an alternative sauce I can use as a dressing? I don't really like the flavours of the ingredients, unfortunately...especially Tahini and soy sauce! Thank you very much!

I store it in an airtight container in the fridge and just zap it in the microwave or reheat it in the oven. It'll last 2-3 days:)

Excellent. Loved all this. I have always cook a whole bag of brown rice at once, then cool and freeze in single portion Tupperware containers because I live alone and it takes a while to prepare and cook for one! I always soak rice, beans, chickpeas, nuts, oats etc, overnight because it helps to make them more digestible for me. Then rinse before cooking. Do you do this? I often use a portion of brown rice, add plant milk and cinnamon just like you did - I thought I’d invented it :-) Haha!

These are such great tips! I find cooking healthy meals for one harder than cooking for a large group, so I love how you freeze foods in single portions. Thanks for the tips! I really only soak my beans before cooking them from dry. I'd love to soak more items, but haven't gotten into the habit yet!

@@TheConscientiousEater Ah thank you. Yes, it’s harder to cook healthily for just yourself - one has find discipline all the time! I do quinoa, barley and buckwheat the same in single portions, because they take the same time to cook a whole bag as for just one portion. Also, I have rice cooked in tomato and chilli like my Nigerian son in law’s national dish, Jollof rice, (Although not so hot for my palette!) plus lemon and coriander rice, sweetcorn and Mexican flavours with quinoa, etc. it would be a good video for you if you fancy, for others to enjoy as well. Love my freezer :)

@@rbrown6476 I love Jollof rice! I've been to Nigeria a couple of times and it's a wonderful place with wonderful people. I completely forgot about Jollof so I need to try making some :)
