hi. If FAT is the issue to avoid insulin resistance, can we eat White skinless Chicken Breast instead of Tofu or egg whites ? 3oz of chicken says it has 3.8 grams of fat and 3oz of firm tofu has 5.9 and canned tuna only has POINT 7 grams of fat in 3oz --as long as we are having a lot of non starchy veggies and grains? I have noticed a big loss of muscle mass in my legs since going vegan and I am trying to fix my situation, but I don't want to harm my health, thanks for your answer.
