Pumpkin Bread
1 ½ c. flour (whole wheat or regular - adjust amount if freshly milled)
2 t. Cinnamon
½ t. Nutmeg
½ t. Allspice
2 t. Baking powder
½ t. Baking soda
½ t. Salt
1` c. pumpkin puree
½ c. buttermilk
½-¾ c. sugar
¼ c. vegetable oil
2 eggs
1 t. Vanilla
Preheat oven to 350 F. Grease loaf pan.
Whisk flour-salt together.
In another bowl whisk pumpkin - vanilla until smooth.
Pour wet ingredients into dry and stir just until combined. Pour into prepared pan.
Bake 45-50 minutes.

The freshly milled flour is in essence whole wheat flour and therefore denser than the all purpose flour that you would buy in the store so you need to adjust when baking. Also, if you don’t bake bread very often and have a lower protein flour you can buy vital wheat protein (both King Arthur Flour and Bob’s Red Mill sell it) and add to your recipes. It will boost the protein content of your flour and help with the rise, texture, and crumb of all your baked goods.

I enjoy these little menageries of a day in the life of Laura. Hello Laura, a quick tip, if all you have on hand is regular milk, simply add teaspoons of vinegar, or lemon juice, to make the amount of buttermilk you need; it is a very quick process.

The reason for this is because the baking soda used for leavening needs acid. Buttermilk is your acid ingredient. So if substituting other milk then you need to add acid as noted!

hi Laura ..You can use the leftover from sifting flour, this is called broken wheat or bulgur. Which you can cook with vegetables. And you can add it bird seeder ..birds love it.

Here’s a hint: Saco Buttermilk powder is a wonderful product! Stored in the refrigerator it is mixed into dry baking ingredients, then water is added. It is a game changer to always have on hand. A lucky, loved grandma will enjoy not only her family, but also her flowers. 😊

Hi Laura, It's a family tradition that every November, my mom, sisters and I make my Mom's pumpkin bread recipe (BTW she's 97 years young, still in good health and bakes with us). We add a topping to ours which is the best.... 1 cup of chopped nuts (pecans); 1/2 cup of brown sugar; 5 T of melted butter. Hope you try it!!! Love, Love your channel!!!

What a perfect gift for Aaron's mom. When you don't put something over the hole in the pot, dont you continually lose soil when you water? Laura, it has to be so fulfilling to take a project like your flour, from seed to bread, especially yummy pumpkin bread. Mmm, that bread looks delicious! I've been milling Einkorn flour for about 3 years, and using it in all my baking. It's high in protein, but lower in gluten, and works well for gluten sensitive people. I make sourdough bread, and don't sift. It was a learning process, but I usually get a very bready lofty loaf, of whole grain bread. It's not like soft bread, but you can eat it without toasting it. Loved the plant bouquet for you mother-in-law❤

When I make pumpkin bread, I add dried cranberries and chopped walnuts. I also serve it with whipped cream cheese. Never last the day

Yes! Pumpkin puree is labor intensive, but it is obvious Laura does not shy away from hard work. She always has pumpkins aplenty. I freeze the puree in 2 cup quantities and have it all year round for baking and oatmeal

I tried your recipe with my freshly milled spelt flour. For your reference and anyone else who’s interested I used 210 grams of sifted freshly milled flour. It was perfect. I made two on different days. Perfect both times. Thanks for the recipe

Drywall tape over the drain hole works great. Water goes out, soil stays in and critters are not allowed in! Doesn’t rot or rust. Lasts until the next planting.

What a wonderful way to start the day Laura. I get to repot a couple of house plants today into larger pots. I love the plant Persian Shield and I always kill them. I promised this plant I would pull out all the stops to keep it alive and healthy so it’s growing well but gets thirsty really fast so today it gets to move to a slightly bigger deeper home.

I never sift mine out. That's the point for me of milling my own wheat, to get the max nutrition from it. For cookies or a cake I might sift. But for breads like this no. It makes the best banana bread.

Yum! If you run out of buttermilk or can’t find it. Sour your milk with some vinegar. I think it’s just as good as buttermilk in a recipe. Just a thought. 🍞🥞🍰 I also use olive oil. I ditched the canola, vegetable oils. Apple sauce is good for that too.

I always add mini chocolate chips to my pumpkin bread...of course my family devours it, so I make enough to fit a 9x13 baking dish...always have enough for breakfast the next day!❤

Was anyone else caught off guard by the pink fingernails? I sure was, ha! First time I have seen Laura with painted nails. The pumpkin bread looks amazing as well! A must try.

Good Morning, Laura I make pumpkin bread all the time. When I want a taste of chocolate I put a few chocolate chips in the bread. It taste wonderful. Have a wonderful day.

Good evening Laura and family, What a wonderful plant arrangement wrote down the name of the plants hopefully I'll be able to find them at the nursery here in town if no I'll take a trip to Amarillo, Texas. I love the beautiful weeping willow tree behind you. You can cut some of the long willow fronds and wind them around each other to form a circle, in order to make a wreath shape, Then, wire onto the wreath some dried statice flowers, juniper berries, little eucalyptus cones, acorns, etc. Add a ribbon bow and you have a nice door wreath.

I love the Dusty miller plants. Because we live in Southern California where it doesn't snow, I put Christmas lights on the plants and they look like snow at night. Dusty Miller spreads by the roots out here and grows all year long. Wouldn't it look neat to have potted Dusty Miller plants around the base of a Christmas Tree with white lights?
