HCH Red Lentil Chili: (Tell her I said hello!)
Red lentil chili
2 cups red lentils
1 red bell pepper chopped
1/2 onion diced
5 dates mashed into date paste
3 garlic cloves minced
1 cube celery juice
1 tbsp ume plum vinegar
28 oz crushed tomatoes
2 cups water
1 tsp each chili powder and paprika
Combine all of your ingredients in your instant pot and cook on sealed/ high pressure for 20 minutes. Serve over rice

Thanks for your videos Joey! I ran with your suggestion of using cashew powder in place of the cashews! I used 1/2 cup. I've never tasted the original recipe so I have no comparison! Delicious! I mixed the cooked mac and cheese with some of the frozen organic mixed veggies that I buy at Costco! Love your enthusiasm! Yes! Always read labels! You never know when they will sneak in oil or some other ingredient we don't want!

I made both the red lentil chili and the baked beans this week. To the baked beans I added a head of swiss chard to them after they were done cooking in the instant pot. I'm eating it with tumeric brown rice for lunches. I made the chili for breakfasts with steel cut oats. I love eating veggies for breakfast so to the chili I added 2 bell peppers, a box of mushrooms, and then after it cooked in the instant pot I added 2 bags of riced cauliflower. It's really good and hearty. Thanks for the recipes Joey.

I buy tomato paste in big cans and throw the unused portion in a sandwich bag in the freezer and when I need some I just chop a hunk off with a knife.

I made the Farro for my family and they loved it!! We make the mac and cheese all of the time so fast and easy. I use the PB2 cashew when I'm in a rush to get it mixed but regular cashews when I have the blender out

What a fun video! I will admit that I was distracted a bit in the beginning by all the wine bottles in the background. And the fact that at least one of them was corked- I mean…WHO has leftover wine? I do like watching your prep videos and I wish that I could be as good as you are in making a weekly plan. Truth is, I just kind of wing my dinners. Breakfast and lunch are always the same for me, but dinners tend to be on the fly- and always WFPB SOS free. Thanks for letting us be with you in the kitchen and a part of your family dinner preps. ❤️

Jill, keep in mind we DON'T drink wine or any alcohol. Those are left over from when someone came over and didn't finish it. We need to dump out that one opened bottle because who knows how long it's been there.

Hi Joey! I buy spices from a place near Atlanta that sells them in plastic containers so the spoons fit. Just an idea- seek wider mouth containers instead of smaller spoons!

Hi from the UK, will definitely make the cashew flour mix, looks great for cauliflower cheese. I prep my green lentils, pearl barley, rice, herbs, spinach and anything else I can think of and keep it all in the freezer in ziplock bags.

I love the fact that you leave in the normal everyday mistakes that happen when you cook. I especially liked the pumpkin that appeared out of nowhere near the beginning of the video. Also......free stuff is free stuff. Don't look a gift horse in the mouth. 🤣🤣

Joey, I wasn't sure if you knew but small amounts of baking soda, like ¼-½ a tsp in any sauce increases the ph if a sauce or a vegan cheese like say mascarpone it makes it slight sweeter, so you can eliminate sugar!

I usually meal prep a bunch of steamed or baked potatoes, including sweet and russet potatoes, steam up a big bag of fresh broccoli, make a vegan cheese sauce of some sort. I need to work on more one pot dishes like this. I will be trying these!! Thank you Joey (and Tim)!!

Thanks so much for sharing these. I cook for one and feel a rush to eat cheese sauce. The powdered version will be a great way to go.

Linda, it is a really good option for just making some cheese sauce for one. Just do the 1/3 cup powder to 1 cup warm milk in the saucepan and stir until it thickens, usually 5 minutes or less.

Grilled romaine lettuce. Yes, please 😋 cut the romaine head in half and grill. Drizzle dressing. YUM! Engine2 has a delicious Caesar dressing recipe. Doesn't taste exactly like Caesar dressing but it's super good. I can't wait to make your mac and cheese powder. I might have to make it tonight. 🤔

How much PB2 Cashew powder would you use instead of the 1 cup of cashews? Lower fat and you wouldn't have to worry about it in the processor.

I would do half cup powder and half a cup water. That should give you a whole cup of cashew butter in the end.

You can chose the recipe you want and then chose "File" from the pull down menu up top and chose "Print" from that menu. That will print the recipe page. Claire, I see what you are talking about. Ok, so like I said in the video and in the first reply to you, that recipe is from High Carb Hannah. She is another KZbinr. It is her recipe so I always give her credit for it. In her video, she tops the lentils with a hummus recipe that she makes from scratch. Since you asked for the recipe, and you were not comfortable going to the video that I had linked where she shows you how to make the lentils, I copied and pasted the written recipe right from her video description. Her recipe has the word hummus in it because she always eats hummus on lentils. Again, I copied that recipe into my own video description just for you to try and make it easier for you to use. But, I see now that for some reason, you saw the word hummus and were triggered by that. At this point, I have worked to make you happy and that seems to be a pointless venture for me. So, I am going to chalk this up to that old saying "You just can't make everyone happy".
