Ingredients:
1 cup mung beans
4 teaspoons curry powder ( or one teaspoon each of cumin, paprika, turmeric and garam masala)
150g okra (can be bought frozen)
1 onion
200g mushrooms
1 tin tomatoes
1 tablespoon tomato puree
4 cups water
2 cloves garlic
1 chilli
4cm piece of fresh ginger and turmeric
1 lemon
1 tin coconut milk ( you can use 1 block silken tofu)
1 cup buckwheat
1 cup brown rice
2 tablespoons fresh coriander
