a tips from my mom: mix the grated coconut with palm sugar/ any sweeteners you'd prefer. then steam (occasionally mix) until the sugar dissolve. this is to ensure that the coconut filling is not dry and scratch your throat, which will make you cough involuntarily sometimes. remember to wrap your steamer cap with tea towel or any absorbent piece of clean cloth you have in order to avoid the condensed water vapour drop into your coconut excessively. finally you'd have moist filing.
