The Grand Ma (babka) of my first wife would make what she called "lazy pirogi " for me , only they were almost the size of a pancake. (Maybe she knew I had a big appetite). She would top them with powdered sugar. I loved them. And I loved her. Thank-You for that recipe. Mike

Looks yummy! Our lazy pierogi in Buffalo is way different. Lol, noodles with sauerkraut, mushrooms, and meat like bacon, kielbasa or corned beef, maybe cottage cheese , and butter.

I find putting the cheese, eggs and salt in a food processor does a nice job of distributing the ingredients. I then use the hand method as you do to incorporate the flour. When I make homemade Farmer's cheese a gallon of milk and one cup of buttermilk makes about 675 grams of cheese. I just add one more egg (total of 4) and keep the flour about the same to make an entire batch.

My mom always made this for us growing up. I loved it. We put fried breadcrumbs on everything. We never wasted any kind of fat. Rye bread fried in bacon fat and topped with roasted marrow, sprinkled with kosher salt is the best. Are you familiar with marrow dumplings? If you’ve made them, I would love to see your version.

The last time I had lazy pierogi I was 8 and at my great aunts house in Baltimore. My mother was Ukrainian and her family would get together. I think my great aunt made them with cottage. My sister and I did not think we could eat them. But as you said once we tried them we made pigs of ourselves! I am 73 now, and this is the first time I have ever seen someone make them. My mothers pierogis were stuffed with mashed potatoes, fried sour kraut, statued onions and bacon. Absolutely fabulous. Thank you for the memories.

Someone I know won't eat pierogi because they don't like the hot cheese inside. But they love my leniwe pierogi. Babcia showed me to use the back of the knife to add cross-marks before cutting. Butter and breadcrumbs are a must. Next time, I will try sugar.

Luv your channel! We mushroom pick too! But, our lazy pierogi must be really lazy, cooked rotini noodles, sauerkraut, cottage cheese, cream of mushroom soup and/or cooked onions and mushrooms, add bacon or corned beef. (Buffalo, NY) Just ate at Simply Pierogi (restaurant) today- you would love it!!!

I have often made farmer cheese with either lemon juice or vinegar…..always good,..but using some Fage Greek yogurt and waiting for the fermentation on the counter makes a much superior cheese more like the farmer cheese from a Polish market…..I applaud you….I have made lazy dumplings for years….mostly because as kids we always used to fight over the “LITTLE TAILS” left from cutting out filled dumplings…😂💕

This looks fantastic! I love making normal pierogi but it is so time consuming, and this looks like a much easier and more manageable midweek recipe. Is it okay to also add fried onions into the dough mixture, or will it fall out when boiling?

My family makes these. It's the only kind we make. The filled kind are good, but this is what we're used to. We just use cottage cheese. We boil them then fry in butter then eat with sour cream or sugar or both...which is how I like it

Hello Anna! Great recipe. It looks delish! I will have to try it but as you said, it is very hard to find farmers cheese here in the US. I know you have a recipe on how to make the farmers cheese but it is too intimidating for me to try. I will have to wait till I visit Buffalo again to get my hands on farmers cheese. However, the Lazy Pierogi I grew up with was not this. The lazy pierogi that I grew up with & know is made with noodles, sauteed mushroom & onions in butter with sauerkraut & cream of mushroom soup for creaminess . Have a Great Day & you guys stay safe.
