It is fresh and super healing, the polka dot matcha cake roll, the perfect towel noodle, soft and delicate without cracking, beautiful and delicious, let's try it together.
Two things need to be done to prevent the cake roll from cracking:
1. The egg whites can be sent to wet foaming, not too hard
2. The cake should not be baked too burnt, just bake it until it has a moist taste. You can adjust it slightly according to your own oven temperament.
Two more tips:
1. Mix oil and low-gluten flour first, stir at will, the flour will not become gluten
2. Many friends will ask, is it true that stirring with egg cream will not defoam? The answer is really really really not, and the egg custard is very fast.
Ingredient list

5 eggs
60 grams of oil
60 grams of milk
70g low-gluten flour
Matcha powder 10g
Matcha powder with water 50g
1 tablespoon of white vinegar
120g whipped cream
Sugar 10g
The squeezed batter is 15 grams of egg yolk paste + 15 grams of meringue

小清新超治愈,波点抹茶蛋糕卷,完美毛巾面,柔软细腻不开裂,好看又好吃,一起试试吧。 蛋糕卷不开裂需要做到两点: 1、蛋白打发到湿性发泡即可,不能打发到太硬哦 2、蛋糕不能烤得太焦,烤到带有湿润的口感即可,大家根据自己的烤箱脾气稍微调节。 再有两点小提示: 1、油和低筋面粉先混合,随意搅拌,面粉也不会起筋 2、还有很多朋友会问,用蛋抽搅拌真的不会消泡吗?答案是真的真的真的不会,并且蛋抽搅拌非常快速呢。 配料表 ======= 鸡蛋5个 油60克 牛奶60克 低筋面粉70克 抹茶粉10克 抹茶粉加水50克 白醋1勺 淡奶油120克 糖10克 挤圆点的面糊是蛋黄糊15克+蛋白霜15克 烤箱预热好170度,小圆点烤一分钟即取出,倒入抹茶糊后,烤20分钟。烤箱温度有差异,大家根据自己的烤箱脾气稍微调节。 祝大家都能做出漂亮的抹茶蛋糕卷~~
