I come from a fishing family on Cape Breton Island. When my dad was young and working on the boats they would discard the cod heads at the fish plant. The locals would cut tongues and cheeks out of them. They are a beautiful meat much like a scollop in texture. This would be a great recipe to use tongues and cheeks on.

Aboard the Victoria Ann, I fished, Commercially, for Pollock & Cod in the Bering Sea for one full season and it was hell. Our ship alone was responsible for over 500 tons of cod that season, while other ships barely caught 5 to 10 tons. Our captain was the best in the industry, at the time. I personally cut the heads off of every single Cod fish, on my 16 hour shift. The Norwegian Baddar techs would stop by once in a while to cut the tongues from the heads but they were the only ones. The cooks would batter and fry them up for them.

I find the rolling boil can break up delicate fish so once the water is at a rolling boil backing the flame down to a slow boil then drop the fish in, might take slightly longer but the pieces stay more intact. Great simple recipe and delicious. Thanks OP! One last idea is to place the fish when done arranged on a metal platter or sheet, drizzle the butter and then stick under a hot broiler for just a minute or two to brown the top, slightly caramelizing the sugar and giving a nice crisp and good flavor.

I will try this. Loves me some seafood. Atlantic cod is quite different than Pacific cod, and I would tend to use the Pacific cod for this if it's a fit. That Atlantic cod is heavenly, so I don't know. It's a bit rare in these parts; I live close to the west coast. It does sound like it will be good! TY

This is a good one. I use double your amount of sugar and don't boil as hard. When they just float I take them out, skewer them, hit with a little lemon pepper and made-at-home copycat Seafood Magic spice blend (just google it) then onto a grill for grill marks and color. Serve a skewer per person with 'clarified butter' (that's butter with the milk solids taken out - look up recipe). I've had people cry at how delicious the lobster is. I just keep my moth shut and smile!

I live in Alaska and even here, halibut costs more than lobster. It runs anywhere from $28 to $38 a lb. People up here call what you made Poor Man's Lobster too but only wealthy people have the fancy boats to get out there and catch them. Thanks for the recipe though, it looks really yummy.

I was not even close to wealthy when I was there, yet I still had a boat, and caught me some great halibut. While it was not fancy, it surely did the job. Wish folks would get off their pity pots sometimes and do what they need to do instead of cryin and bitchin.

I made this today, I bought a fresh cod filet from the store, but I thought it was a bit to salty, Was very good though. Next time I will cut salt down by 1/4 cup.

Poor Man's Gourmet Kitchen very light and tender fillets, very very good eating, need to be over 3 feet to be worthwhile harvesting, need 2 sharp knives a stone and a steel, one sturdy one to deal with the skin, and a filleting to get the meat off, would be amazing in a green curry

but I suspect not easy to find. whereas you can get cod anywhere - and for pretty cheap. same with all those who say monkfish is the best for this. monkfish is as expensive as lobster now!

I would add Garlic to the butter, but Halibut works great too, but it can often be equally as pricey as Lobster itself, so you're better off going with the real thing or just sticking with the Cod. Unless you're catching.....

I wanted some pickled beats so I took a turnip and boiled it in some sugar water and and lemon. Surprise surprise. It was nothing like I was looking for. Maybe some butter next time.

Is this intended to be served hot, or can it be just as good let go cold and serve like lobster salad which is usually cooked but cold? The only time I've had hot lobster is in an Indian Biriani where it was hot and mixed in with the rice.

I,m surprised that no one on here has mentioned Monk Fish. It is actually called Poor Man's Lobster. It is harder to obtain but you can not tell it from the real thing.

Yup.....i cook it just as is if it was Lobster in the broiler. Salt, pepper & clarified butter. Here is another treat. Drop it in boiling water for 2 minutes & remove. Let it sit & baste it with salt, pepper & clarified butter. Return it on a medium hot grill (Charcoal) & keep basting it & turning it over for about 10 minutes. It will NOT stick. ENJOY!

Boiling it in the sugar and lemon juice changes the texture of the fish to be more like lobster. You also have to make sure not to stir it or it'll break apart and create fish soup. Seasoning and searing it wouldn't be imitation lobster, it'd be seared cod.

Why use cod when there are prawns (aka shrimp)? Personally, I consider that shrimp is more like poor man's lobster than cod could ever be. A pound of cod and a pound of shrimp is very close in price too. I've been poaching cod since my father taught me how as a teenager 50 years ago. Cod is also good broiled and deep-fried, but it never truly tastes like lobster even if you poach it in lobster bisque. However, shrimp has a sweet taste and texture and if you poach it in lobster bisque your tastebuds will be hard-pressed to tell the difference! But if you can find Royal Red shrimp then you will have the next best thing to lobster. Rock Shrimp is a good substitute too but the shell is quite hard.

Tried this, did not stir the pot, when it floated got it out. It tastes just like COD dipped in butter. Did not really taste like LOBSTER at all, but very good COD! Completely lacked the sweetness of real Lobster.

I have tried this with Cod, Lota lota, and Monk. For texture, I like the Monk fish better, Cod is my second choice. Nowadays, I just buy lobster.

Is this supposed to imitate the flavor, texture or both? I am betting texture as I don't see how sugar, salt and lemon converts the flavor other than to taste sweeter, saltier and lemonier, is that a word?

@@PMGK because you're using a lot better meat than lobster is why it tastes so good. I took a girl to a high class restaurant known for it's very expensive lobster. We both tasted it without any of the coverup seasonings and butter. We both got up and left. It tasted worse than the muddiest old bayou bass I had ever tasted.

Well 24 hrs after my last comment I went for it and tried the recipe verbatim. I will give the video a Like because it was well made and very informative. I used fresh caught Cod delivered from Cornwall, couldn't get fresher if it was straight off the boat. So better quality can't be found anywhere. The result was nothing like Lobster either in taste or texture. In fact it was nothing like any shellfish I've ever eaten. You can't make a shoal type fish have the texture of a crustacean when it's a totally different species and the flesh is a different density. At least it didn't ruin a good two cod fillets. It tastes just like poached cod with a little too much sweetness and saltiness and despite having half a lemon in the water no lemon flavour was evident at all. So sad to say this was a vote with a klaxon !!

Again, it's Poor Man's Lobster so it's not goingvto be the same thing, just similar. The price of Cod, however, is practically the same as lobster, these days! 🙌

Personally, I don't think it really tastes like either. That's why it's the "Poor Man's" version and not my written recipe. Just how it's done. 🍻

Why call it poor mans lobster... I thought this was going to be about some crappy fish... ITS FRICKEN TOP QUALITY COD FISH,, NOTHING WRONG WITH COD AND IF I HAD TO HAVE EITHER LOBSTER OR COD TO SURVIVE ON I'D TAKE COD IN A SECOND..

@@PMGK YOU know your NOT the only one who loses it over caps.... IT happens that it's due to a bad phone with a bad keyboard/bad spellcheck.... BUT yes, there's a lot of people who in this insane world with a hundred thousand more signuficant things to object to HAVE THAT STRANGE DISEASE...Well that and similarly NOT adressig the content AND finding other things wrong such as correcting the texted way the words their, there or ther're appeared..

@@PMGK I used to use it back in the eighties. I have no idea what the market is for it today. I got my fish from all over the world back then. High end restaurants. One thing you should really try is halibut cheeks if you haven't already. They are delicious! Up in Alaska I would raid the halibut carcass totes at the canneries and cut the cheeks out of them. They are up to like hockey puck size or bigger, and are kinda like a cross between king crab and halibut by texture and flavor. They taste totally different than the rest of the fish. Bon appetit

Everyone calm down with the "so-and-so stole blah blah blah from you-know-who" noise. This is a pretty standard technique, cheap Chinese restaurants, for example, have been making this for ages. There are lots of different variations out there.

Halibut?? It is more expensive than lobster. That would the same as using King Crab chopped and formed to taste like Pollack due to over use in imitation crab sticks.
