A simple and easy recipe for every cook, big and small. Tasty and soft aromatic pork. Recipe for homemade spread:
pork neck with fat about 1.5 kg
raw smoked bacon 0.5 kg
Spices :
salt
black pepper
dried garlic (mix)
Bay leaf
allspice
fresh thyme
marjoram
ml of water
Cut the meat into small cubes
2 by 2 centimeters maximum, season with salt and pepper, garlic and thyme. Then put the meat in a large pot, preferably with a thick bottom, and cook over low, very low heat for 4 hours, stirring occasionally ...
after 4 hours of cooking, take the pot off the heat and pull out the bay leaf, allspice and possibly the bacon skin.
Try the pork neck and, if necessary, season with salt and pepper, add the marjoram by rubbing it between your fingers ... add some fresh thyme. Mix everything thoroughly and mash the meat gently with a wooden or slotted spoon. Put the hot meat into scalded and dry jars, then after cleaning the thread of the jar, screw the lid tightly and place the jar upside down.
The pork neck spread prepared in this way, after it has completely cooled down, can be put into the refrigerator. You can store outside the refrigerator in a cool, preferably slightly darkened place for some time ...
The pork neck is really delicious and aromatic, it is not very greasy like a typical spread and it is not dry, if you do not like such minced meat, you can grind the pork neck after cooking - it will be uniform ... although it is not the same.
