We have some relatives that are from Iowa that came out for a visit many years ago. They were telling us about this sandwich and how they make it and I said "that's actually a pork loin sandwich". So it sounds like whether you use pork tenderloin or pork loin either is acceptable in the midwest and both called a pork tenderloin sandwich. I do know the Germans typically use pork loin for their schnitzel so not surprising (at least in Iowa with it's huge German population) that it's used in this sandwich.

Fry about 3-4 mins a side at like 325-350F oil temp. If theyre really thin you can do 2 mins a side...

You can use either or, it doesnt really matter.. The exception would be if you're using tenderloin and its really thin after flattening youd cook it about a min less pepr side. Both are tender lean cuts of pork and when baking in the oven it's the same exact method of baking to 140F to ideally hit after resting hit a finished temp of 145F...
