You need to be careful what you do my friend, gloves touching trash and after that food is cross contamination, same cutting box with the serrated and after cut bread you can left pieces in the bread.

Great job.. I have a burger trailer similar to yours and the only thing I do differently is drop my French fries after I put meat on grill only because in the beginning I had customers complaining about cold fries.. I’ve been open for 2 years now and about to open my second one..
