The Kitchenaid manual tells you to adjust the height of the mixer before you begin to use it. It says to put a dime in the bowl and adjust until the mixer will stir the dime around the bowl using the paddle attachment.

I have made this recipe many times and it is absolutely delicious! Vanishes right off the table. I usually make the dough and freeze it, then take it out when we want cookies. Highly recommend!

I love these cookies, thank you for this! I like the paddles for the mixer that have the silicone edge on the blades that scrape the bowl as it turns. Just saves a step and keeps your hands and forearms from getting product on them trying to use a spatula lol. Or at least that's what happens to me, or used to.

If you watch America's Test Kitchen, they have a really good video showing how to test if you need to adjust it. It's been a while since I saw it, but I believe they called it "the dime test" because that's how they determined if the paddle needed to be adjusted

Even more, if possible, at freezer friendly Side question on vanilla extract, I followed your tutorial to make my own, I’ve since read that leaving vanilla beans in jar once the level drops below bean height, as you are using it, can cause potential mold growth. Have you heard this and do you know if it’s true. One other site said you can just toss more vodka in and another bean when low, but that doesn’t make sense to me for flavor build up. Just picking your brain if you have any thoughts on it
