Thanks to this channel and the great chef instructor that he is I’ve been able to extremity enhance the cooking in my house. I’m 57 and purchased my first cast iron skillet about four months ago. I’ve been making dinners for my fiancé and my Son and have received great reviews. Tonight I cooked Chicken Marcela and was very nervous about it. It use to be my go to dinner in restaurants when I would order. So trying it myself was nerv-racking. Thanks to this channel it truly was an amazing dish and she said it was my best dish yet. Ok. John I love to cook and live your videos. But the litmus test is obviously making the recipe. So I watched this video numerous times, took notes and then made it for the first. I am a relentless prepper so I got everything ready first. As with most cooking the secret is in the prep. I followed your directions and then made it. We served it with Fettuccine. It was absolutely fantastic and was an instant family favourite. I literally was required to make this twice the same week and I could have made it more and it would have been devoured. Suffice it to say that this is now part of my repertoire and will be served to friends and family far and wide. John thanks for the great videos AND great recipes!!!

I've been wanting to make this since it was posted and I FINALLY got around to it, a year later. This recipe is SO GOOD. I added onion powder, garlic powder, and rosemary to the flower and chicken for season. It slapped SO HARD 😬😬

I used to work for an ✨upper scale✨ bistro and their chicken marsala was my absolute favorite! We served it with our garlic smashed potatoes and I would always ask them to top my potatoes with the "gravy" So good.

Rosemary and Thyme are often added to Marsalas, as well. And many chefs prefer olive oil to butter. Substitute rice flour or Arrowroot to keep it gluten-free.

I've never put cream in chicken marsala before, I learned from an Italian and they seem to have some sort of weird hatred for cream lol. I appreciate the baker's view on this recipe, everything is measured so precisely lol.

Made this for dinner. So satisfying! The only thing I would change is to double the amounts for everything but the chicken! The gravy is so good! Spooned it over the angel hair pasta!

I add a shallot with the mushrooms roasted it with the butter and garlic i add white Marsala cooking wine and add a tablespoon of flour to the chicken broth whisk it in the broth add it in after the wine cooks down for a min than let it thicken its perfect 👌

Chicken needs to remove silver skin. Pound between plastic wrap. Saute chicken in butter or clarified butter. Remove and keep warm. Wipe the pan and then butter to saute the mushrooms until brown, I add the Marsala (sweet), at least 1/2 cup, more is better. Reduce, add a little chicken broth, and place the chicken on top. Cover and let the steam move the flavor into the chicken and keep it moist. Remove the chicken and mushrooms, cover with foil, and use the remains to make the sauce. Now add more butter and saute the garlic. More Marsala and broth, reduce, and add butter, to make a wonderful sauce that is liquidy. Reduce and on the chicken and mushrooms to present, top with fresh parsley leaves. I served mine on top of farfalle pasta.
