They look beautifuuuul but, as a sicilian, I feel the necessity to make some corrections 😂: in the dough we add some cocoa powder (which give them the characteristic brown color and the slightly bitter taste) and some vinegar (it helps to give even more crunchiness to the crust!). Also we use to mix the ricotta with the sugar the day before, let them sit in order to make the moisture come out and finally we sift the mixture to make it smoother (then we add the chocolate chips). If you use bamboo instead of the metal cannoli foils, they’ll cook really well and the pastry will fall off the bamboo. Plus you can handle the bamboo without using tongs. Really awesome recipe. Thank you

I have made several of John's recipes and each one of them have been freakin' delicious!! It's funny because my kids know if mom is making a new recipe it is the Preppy Chef's!! lol The other day my daughter said she wanted to make broccoli and cheddar soup and I said, "I promise you if you make this recipe I am about to send you it will be amazing!" She said... "Let me guess.... It's the Preppy Chef's recipe??" Hahaha " Of course it is!" lol Thank you John for all of your amazing recipes! I made the recipe for the cannoli shell. I thought it was missing something....maybe a little ground cinnamon. However......BIG HOWEVER.....they were absolutely delicious the next day!! They weren't as crunchy because I had them in the fridge with the filling. BUUUUTTTTTT, they were the bomb!! I will try the cinnamon in the dough next time, and I'll make your filling recipe as well!! They were fairly easy to make with the cannoli metal tubes. One trick that I did to prevent the dough from sticking to the tubes was to push down where the tubes meet to dislodge the cannoli from the metal before attempting to remove them from the cannoli. I'm so happy that I tried this wonderful recipe!!! I'll never have to purchase empty cannoli shells, which by the way are expensive. 😁🙃

My grandma use to use old baby t shirts as cheese cloth or white undershirts the "wife beater" type... She used clothes pins or handle of wooden spoon to fry with;-) Thank you for providing the non alcohol options! I buy the shells premade or make chips and dip instead of shell

At both my Italian grandmothers’ houses, I looked forward to eating cannoli, especially at the holidays. Shells and filling were made, but the cannoli were not filled until just before eating. We fill our cannoli with custard. In Italy you can find both ricotta and custard fillings. As far as the amount of wine used, my maternal grandmother’s recipe calls for “one eggshell of wine.”

@@dawnfrederick521It is the basic vanilla egg custard. The first time I made it by myself, I threw away the first two batches because I didn’t know about tempering the eggs. On my third try, I put the custard through a sieve and called it a day. I learned a few things since then.😃

Wow that's amazing...we have the same version of snack called cream rolls...the shell have around 20 layers and baked very thin in a cone shape and then it's filled with whipping cream and garnished with (tooti frooti) basically raw pumpkin candy

FYI for people who can’t find a cheesecloth or doesn’t want to spend the money on one, you can take some good paper towels, double them so 2 for example laying on top of the other, add some ricotta, smooth it down, add 2 more layered paper towels on top and press gently until it absorbs all the liquid. Carefully remove top layer paper towels and take a spoon and carefully scoop off ricotta. Bam! Works so easy!
