I always try to keep ham hocks in my freezer..for 2 reasons to make ham hocks & beans , and to make ham broth to add to canning cooked ham..if the ham is not cooked you don't need to add liquid, if the ham is cooked you need to add liquid you can use veggie broth, water or chicken broth, but I choose to make my own ham broth, I fill my crock pot with water, pepper, onion and ham hock, I let it cook for 12 hours,

i like your idea of using the bone for broth in the pints. good idea. i know it's been 4 years, but i hope your surgery went well.

Hope you're feeling much better by now! One tip I saw on a video, put your strainer down in the liquid and fill the ladle inside the strainer.

I canned leftover spiral ham in water before, and it tasted washed. I think if I try and use ham broth and use more of a chunked ham it would do better.

I strain my broth through a permanent coffee filter sitting inside a typical strainer and draining into a large container..The permanent coffee filter takes out nearly all of the small particulate matter and eventually becomes clogged, but a quick rinse with hot water usually cleans it up and brings it back into serviceable condition to continue the task at hand

I use a baking bag when I bake ham. I pour the juice/broth into freezer bags (small amounts per bag) and freeze them. It's perfect for seasoning or using when canning pork.

Lol, as I'm watching this I already have my ham bone in the pressure cooker, making wonderful bone broth. Yes, I will add some broth to the ham I will can tonight But I love to can homemade broths and stock. Instead of using water when I cook rice, noodles, etc, I use broth. Makes everything much more flavorful

I love this idea I have 3 hams in the freezer from Aldi I would love ti have them canned I will def do this never thought of doing it, and making the ham broth is awesome way to can it. I would think plain water would not be good at all

It is great for quick meals. I fry some potatoes with onions put in cabbage and a pint of ham. Salt and pepper to taste. Great in bean soup, omelettes, quiche and so much more. No refrigeration needed.

Hello Pam, I never have anything to add because you know everything already but I found a ham boullion that you might want to buy a pkg and see if you like it. It's called Goya ham boullion and I purchase it at Walmart. It's not in the soup section, it's in with the international foods, Mexican I believe. Obviously not as good as real ham broth but it's better than not having anything and it's the only ham flavoured boullion I have ever found. Blessings to you for a speedy recovery. You are very brave to go through such a complicated surgery.

thanks, i have two spiral hams i want to pressure can. im gona put one inthe instapot with water to get the broth then transfer to 17 pints in the pressure cooker. im thinking one hour will do the trick

I have canned for many years but found when canning ham it always comes out tasting like roast and not the canned ham you can purchase from the market . Do you have a secret canning ham so it taste like reg. good o'l ham ? I am new to your channel so don't know what surgery you are going in for but sending prayers up . What is your name ? Why not comfortable doing quarts? I just finished 7 quarts of whole chicken pieces, thighs & legs and breasts. I'm at 4,000ft so did 90 minutes @ 15psi. The Presto instructions said to do it @ 12-13psi but I couldn't hold it under 15 very well. One jar didn't seal so I refrigerated it and ate from that jar for a week (cooked the chicken breast just to be sure). It was delicious! I'm no expert either (which is why I am curious as to why you don't do quarts) but it was pretty easy for my first pressure canning event.

@@oldhippyhomesteaders Ah, that makes sense; thanks. There's just one of me but I also have 2 cats that help me go through the meats very quickly, LOL. Also, I only eat meat so I'm looking at about 3 meals per quart jar.

I cool and refrigerate one day for fat to solidify and scrape off fat. So chemicals to be thrown out w greasy fat. Good idea to make base. I didn’t think to can. Lol I throw in ziplock then freezer.

hi homesteader, I really need some advice. I bought 3 cured hams with the idea of canning them. I have never canned before, so maybe a poor choice to start out with ham I don't know! Anyway, my All American Canner is on the way and I wanted to have the hams ready. I started to cut all the meat from the bone but since the juice of the hams was like "bloody", and the meat was tough to cut and pull away from the bone, I went ahead and baked them to the length of time and temp on package in order to make the process easier. Mistake??? I diced all the ham up into little pieces and got most all the fat and gristle and vacuum sealed and froze all in a ten pound package. I was going to thaw it once I am ready to can but now I am second guessing this. I am afraid that since I cooked the ham so thoroughly, it wont be any good after canning it. And now its froze in one ten pound package! Your thoughts?

It should be ok to can since it's already cooked remember to add water ,broth etc to cover the meat do not fill to top of jar leave 1" headspace and wipe off rim because ham is greasy if grease gets under the seal it wont seal

Hi...like your sweater!! New to canning. So I have a question. I have seen people put a splash of vinegar when doing bones to pull more out of the bone. Could you do that with this or would it change the flavor of the ham? Thanks and pray you are doing well at this late date. Jesus bless.

Not sure if your question was answered, pressure can as with any meat. Vent canner for 10 min, put weight on & once at pressure, start timing.

Put your strainer down in the liquid then ladle the liquid out of the strainer and nothing else. Good for you in not over packing. The USDA has rules for good reason. Listen to them. Thanks even though I'm late to the party.

The video is called "Pressure canning cooked ham". She also states that she was canning leftovers, and adding broth made from the ham bone. Hopefully, that clears up your confusion if the ham is raw :)

I think I have another ham buried in my freezer....I would love to have this on hand. I just always make/can soup with my leftover. I have a LOT of ham broth from a year ago or so....
