Chef Anna Olson teaches you how to turn Lemon Meringue Pie into Lemon Meringue Squares that are bursting with fresh lemon taste.

Ingredients
Crust
⅔ cup (90 g) graham cracker crumbs
½ cup (75 g) all-purpose flour
½ cup (50 g) flaked sweetened coconut
1 Tbsp (15 g) sugar
⅓ cup (70 g) unsalted butter, melted
Filling
1 300 mL tin sweetened condensed milk
5 large egg yolks (save whites for meringue)
⅔ cup (160 mL) fresh lemon juice
2 tsp (2g) lemon zest
Marshmallow Layer
5 Tbsp (75 mL) cold water
2 ¼ (15 g) tsp gelatin powder
1 tsp (3 g) meringue powder
½ cup (115 g) sugar
¼ cup (60 mL) white corn syrup
1 pinch salt
Directions
Crust
1. Preheat oven to 350ºF and lightly grease an 8-inch square pan and line with parchment paper so that it comes up the sides of the pan. Toss all the crust ingredients until well-combined and press into the prepared pan. Bake for 12 minutes and cool while preparing the lemon filling.
Filling
1. Reduce the oven to 325ºF. Whisk all the filling ingredients together and pour into the cooled crust. Bake for 20 minutes, until set but with a little jiggle in the centre, then cool to room temperature before chilling for at least an hour.
Marshmallow Layer
1. Stir 3 Tbsp (45 mL) of the cold water with the gelatin and the meringue powder in a large bowl or the bowl of a mixer fitted with the whip attachment and set aside.
2. Bring the remaining 2 Tbsp (30 mL) of water, the sugar and the corn syrup to a boil and boil uncovered and without stirring until it reaches a temperature of 240ºF on a candy thermometer. While whipping, carefully pour the hot sugar into the bowl with the gelatin and whip this on high speed until tripled in volume and cooled, about 5 minutes.
3. Remove the lemon square from the fridge. Dollop the marshmallow on top of the filling and spread even. Let chill until set.
4. Use a blowtorch to lightly brown the marshmallow and chill until ready to slice and serve.
5. The squares will keep for up to 3 days refrigerated.

I've made numerous recipes of Anna's and been pleased with all of them. This was another gem although a bit time consuming. Family loved them. I had never heard of meringue powder but found it at my local grocery store.

Wow this recipe is amazing! I substituted a Swiss meringue for the marshmallow topping described to use up the egg whites. Worked great. The filling and crust are both delicious.

Hi Anna, I made this recipe. It was great. Unfortunately the marshmallow topping refused to stay on the lemon curd. Would you know why that is? Its like the entire top peeled off the curd. Also I don't have a stand mixer so i used a hand held mixer to make this and while i was dripping the sugar syrup into the gelatin, it started to harden and i literally had to fish out the hard bits of crystallized sugar from the mixture. Would you know why this has happen? I am making this in May (autumn in Melbourne) which means the temperature is about 11 degrees at the moment.

Do you add the whites to the meringue??? It doesn’t say in the description box. But it says to save whites in the ingredients list.

@@SR-xr6mz Anna said that meringue powder is dried egg whites. Cream of tartar is used to make egg whites more stable when whipping them into a meringue, so it is definitely not a substitute for the meringue powder.

Yes you can use egg whites for the meringue. Just make sure you whip the egg whites first before adding the hot sugar

Is there an alternative to using a butane torch? Could I broil this instead? I am pyrophobic, and I can't even light a match, little and handle a small torch.

The only "fancy" ingredient I see is meringue powder, which is readily available on Amazon. Just give it a google!!

Me too. I don't see why we couldn't use the marshmallow fluff in the jar other than the fact that we'd be cheating, lol but I think that would still work. I have two jars in my cabinet (I use it to make frosting some times). If I wanted to make these right now it's either use the jar or go to the store. I'll take using the jar, lol...

Sorry but your recipe has many third elements which should not be used, is like cheating on the traditional recipe. Its more complicated and can not be called lemon meringue pie. First the base is not sweet pastry, second pouring sweetest condensed milk?? really?? third your marshmallow mix, which is sets nicely because of the agar agar or gel you are incorporating. This recipe can confuse someone who wants to learn lemon meringue pie. It also seems too sweet.
