Awesome Amazing and Superb tips ...Im from Mumbai self taught where baking is concerned. 6 eggs( 360gm) 60gm each whip up with 200gm Sugar/coconut palm/muscovado on high speed. About 8 mins till Golden yellow. You cant overdo it. 9 inch round pan can be lined with parchment paper...no need to grease the pan. Whilst the eggs are doing their last fluffing. 2.1 cup /200gm of sugar , 1 cup flour/ 150gm, 2 tablespoons butter... I like pineapple cream cake. Using the syrup for soaking the cake. I liked your idea of lemon cream cheese. 125gm plain cream cheese add 2 tbsp fresh lemon juice 1/3 cup sugar to soften it up and lemon zest..for the filling Add whipping 375ml cream (TIP :1cup to 1 tbsp of skimmed milk powder so it won't collapse ,lemon juice holds it all together.

Having only seen your more formal-directed shows, -- even though they are all engaging -- seeing your personality in the streaming videos is really endearing. I went from a flop as a baker to making it so much more rewarding with your instructions. I would love to see you do a bread series. I think with the lock-downs, a lot of people are baking bread at home. I know its not altogehter your focus, but it would be cool to see your take on homemade breads.

1. You are really my best mentor . 1. Can I use cake flour instead of APF ? 2. I was having high volume but when I folded in the flour , the volume seemed to have reduced after that. I added the lemon juice to the melted butter instead of separately , that’s the only thing I did differently bec I had forgotten to put in the juice earlier .
