Pumpkin Bread | One Pot Chef

Despite using pumpkin in a dessert being a fairly alien concept to an Australian, today I make a classic loaf of Pumpkin Bread! Similar to Banana Bread, this easy baked treat features pureed pumpkin, brown sugar and delightful spices. Served warm, cold, or toasted, this beautiful Pumpkin Bread is great for a mid morning or afternoon snack - give it a go! :)
Ingredients:
2 1/2 Cups of Plain All Purpose Flour
1 Teaspoon of Baking Powder
1 Teaspoon of Baking Soda
1 Teaspoon of Cinnamon
1/2 Teaspoon of Ground Ginger
1/2 Teaspoon of Mixed Spice (aka Pumpkin Spice)
1 Cup of Brown Sugar
410g (15oz) Can of Pumpkin Puree
3/4 Cup of Vegetable Oil
1/4 Cup of Water
2 Teaspoons of Vanilla Extract
Preparation Time: About 10 minutes
Cooking Time: About 45 minutes approx.

Love all things pumpkin. Everyone thinks it is weird that pumpkin pie is my favorite pie. I am in WA state and we also have pumpkin coffees and ice cream in the Fall. Been making pumpkin bread for 50 years. Yes I am 70.🙂

Drizzle pure maple syrup on the slice then serve. Delicious. I’m from the province of Québec, Canada. My uncle had a farm and a sugarbush. Grew up helping him on the farm and making maple syrup. Quick breads use the muffin method so what you do is you dump all of your wet ingredients into your dry and mix them quickly and small lumps don't matter.

As far as spices you might use, I've had great success with only using a teaspoon to a teaspoon and a half of Five Spice Powder instead of all the listed spices. I do this for pumpkin pies too. Toasted chopped walnuts and/or chocolate chips make nice additions also.
