I did not know people eat pumpkin in Japan. Here in the US people commonly put pumpkin in dessert pies during the autumn/fall and winter, but I like pumpkin and squash in all kinds of food. Pumpkin makes a very rich soup. Pumpkin seeds are also very nutritious when roasted.

Funnily enough, I watched your video eating my onion-zucchini pasta which I used to make also with tuna and tomatoes (but now tomates aren't in season anymore here and I didn't want to use tuna) so there are some similarities between your dish and mine, I liked that

I had a wonderful pumpkin dish in Nagano at a hotel restaurant, I have hit asian markets and never found as Japanese pumpkin, maybe it was the squash, I will have to try

You can also substitute acorn squash for kabocha. You want to use a winter squash, not summer squash.Hadn't thought about using a yam instead.

I always struggle with cutting the kabocha as well. I usually ask my husband to cut it in half or quarters before I cut it into the chuncks I need. The kabocha miso soup would i think also be great with mochi instead of udon (I just love mochi) and for a bit of a kick as my husband likes it shichimi on it just before eating the udon miso soup. Now I have kabocha again (I can really only get it in autumn and beginning of winter) I need to make the spread. My daughter loves the kabocha korokke (I got teh recipe from the ootoya recipe book hahaha) so I wonder if she'll eat this as well. Our favourite kabocha recipes are those korokke and kabocha salad. And I have some stir fry recipes with kabocha with ama kara seasoning. And though not kabocha but really good for autumn, yesterday I made a easy kuri and sweet potato potage. That would be great with for example kabocha tenpura. Hope your sons are feelling better now.

These look amazing! I think I need to go to the farmer's market tomorrow, and see if they have kabocha squash. :) I've seen it around I think, though the favourite winter squash here is butternut.

Here in Sweden I don’t think we can get a kabochi, but we do have something called butternut pumpkin. Do you think I could use that instead? It also has a sweet taste. I hope your boys get well soon, being sick is no fun! In Sweden we often eat soup and drink tea with honey when we are sick or have a cold.

I'd like to try kabocha pumpkin, but I hate squash yet I like sweet potato. If I see a small one for sale I'll give it a try. I haven't seen any so far, just regular pumpkins. Could you do some recipes that use only the rice cooker? And any sweet potato ones, because the only thing I do with the purple ones is put them in miso soup lol.

How do you know if the kabocha is fresh and good to eat? The kabocha here sold in the Netherlands sometimes have weird stains on the skin and I don't know if that's normal or not🤔

It’s the same as any other squash. Unfortunately the only “real” way to know is to cut in but there are tips and tricks online to try and identify which are still fresh inside- google “how to tell if kabocha squash is fresh”. The coloring on the skin should be mostly green and hard to touch, if you really don’t feel ok with eating stained skin you can cut it off. It should feel heavy and if there’s any soft spots try another. Good luck!
