1 cup normal rice flour
1/3 cup sugar
1/2 tsp instant yeast
1/2 cup coconut milk
1/2 cup water

You can grind rice in a stone pestle and mortar, works very well :) I've made idli this way many times

Hi Juliette, have you tried grinding the glutinous rice on the mortar and pestle as well? As I can't find glutinous flour of heirloom variety. Tia.

@@kookiecrunchy Hi, no I haven't ever used glutinous rice, sorry, but I'm sure it would work! I can imagine it would be hard (well, depending on where you are) to find heirloom varieties indeed… I haven't ever bought it cause we only buy bulk and in France I have never seen any sold in bulk, but one day I'll try any how!

Interestingly enough when we mention regular puto being leavened with baking powder that is just the modern puto. Traditionally almost all puto were made from fermented rice. It’s awesome to keep that tradition alive. But this was a still a great video and hope everyone tastes puto Calaisiao one day

I’m really excited to find this video!! I’ve been wanting to make puto for my boyfriend for a while and this video is going to be so helpful! I wanted to make a version with the rice flour since that is the version that he is familiar with. I have found other recipes with normal all purpose flour or cake flour, and while they all seem tasty, it just wasn’t what I wanted. I’m a fan of your channel, so I’m really glad to discover this! (I guess I now know that there’s an archive of your videos for me to deep dive in and learn how to make more Filipino food!)

I’ve tried developing a recipe for this for 6 years and haven’t really been successful :( This video has by far been the most helpful! I just knew they must be using a specific type or a combination of rice but had no other source to go from :/. I’ve developed something similar to your recipe but it just doesn’t compare to the real thing...

I grew up in Dinalaoan Calasiao (where puto calasiao originated) we don’t add coconut milk at all .. the only main ingredients is Rice (first class rice) and sugar .

I never knew about this version of puto! Grew up with the normal, non-fermented version like you. Question: can you steam it in an instant pot? I just got one!

I tried this recipe and I ended up with a much thicker batter. I think the glutinous rice flour should only be 1/4 cup. There shouldn't be coconut milk.

I tried the recipe. I suggest not adding coco milk. It altered the true taste of calasiao puto. the coconut taste should come from the grated coconut . Also suggest proofing it longer for the real “fermented” taste. Thanks for the recipe anyway.

Oh that’s a good tip thank you! Another person commented saying there’s no coconut milk added in traditional Puto calasiao. I would LOVE to have the real proofed puto calasiao one day
