Mrs Harry, can I bake the dough immediately without putting in the fridge for 12 hours ? Can I substitute the oil with sunflower cooking oil ?

Hi Doris. Since the fridge time functions like as a replacement for kneading, we cannot bake right after the first proofing (dough size rise). There is other method (such as folding and rest time intervals) to make baking possible without knead nor fridge time. However, it is not discussed in this video. You can always substitute the oil/fat with your choice, only that the final flavour would be different. Some European style bread prefer Olive oil to butter. Please note. Hi Christina: 1. Would you please explain a little more about ‘add hot dog into dough’? I am sorry that I don’t quite get it. 2. The combination of flours or single use would bring different texture to your final bread. It’s ok to use bread flour only. Or you might like to test on a mix of flours, to find your favourite texture. It’s up to you. Enjoy the process.

@@mrsharry.mrsharry I think so too, I tried just mix water and yeast ,didn't come up any bubbles.
Hi I am afraid there is no replacement for eggs. There are other bread recipes with no eggs as ingredients, the flavour and texture would be different. Yes, definitely a better choice. Easier to manage too. I would suggest 170C 15-20min. (However, it really depends on individual oven. You might like to try more than one time to test it out.) Regarding fillings, it's good to try if the thickness of dough allows. No Knead dough is sometimes too fluid for detailed shaping. Good luck!

Hi, my fridge temperature is set at 4C, is this too low for the overnight fermentation?

Hi. The temp is totally fine. The freezer time allows the full development of gluten, though fermentation might still take place (very very very slowly or just stop). You may see that I let my dough rise till size 1.5-2 times bigger before fridge time. Hope this information helps. Enjoy baking!

The weather takes account. If you are in tropical area, it is ok. If your place is below 20C or even freezing winter, warm milk (lukewarm) will ensure higher rate of fermentation success. Best wishes!~
