I love corn casserole we had a country cook who was the head cook in our hospital cafeteria and he would make this in huge pans for meals in our cafeteria and it was so delicious and every pan would sell out before shifts end every time he made it , he would make it for both day and night shifts meals which I always thought was so kind if him because the night shift sometimes felt like we got left overs or not as nice of meals as day shifts did ! I make this recipe all the time. I use the same ingredients but add more ingredients to my recipe. I add onion, green, red, yellow bell peppers, pickle jalapeños peppers, and garlic powder, or you may sub the jalapeños for red pepper flakes. The additional ingredients really create a fantastic dish. I also add 1/4 to 1/2 cup of milk for additional moisture. One additional tip is to stir your dish during the cooking process after it has cooked for about 15 to 20 minutes. This ensures the middle is cooking evenly as the sides. It's all about taste to your liking.
