Add a can of creamed corn and a can of drained and chopped green chilies. Adds some sweet and heat. I always get asked to bring cornbread to chili dinners or chili contests in my area. So easy to make multiple batches with a great base recipe like yours. I just double it, add two cans creamed corn and 2 tablespoons (30 gms) of extra sugar. The two cans of drained and chopped green chilies are optional. I usually end up making both plain cornbread and green chili cornbread. Some like a little spice and some don’t.

You would have done so great with a Southern restaurant in the US. Some pinto beans cooked with a hamhock,fried potatoes,fried okra, your cornbread and a big slice of sweet Vidalia onion and of course a big glass of sweet iced tea . Perfect comfort meal. Love cornbread especially with chili. I also bake it on top of shepherd pie instead of potatoes. Another way to make cornbread is honey top cornbread. I bake about 1/2 the recommended time then give the top a really good drizzle of honey all over the top then finish the bake. Cheers

I make cornbread without flour and only a teaspoon of sugar. 2 cups of cornmeal, 2 beaten eggs, 2 teaspoons of baking powder, 2 tablespoons of oil or melted bacon grease, 1 cup buttermilk, 1 teaspoon salt, 1/2 teaspoon of sugar. Combine dry ingredients and add milk and eggs. Heat the oil in a cast iron skillet, swirl around the skillet to coat the bottom and sides, then add to the batter and stir it in quickly. Pour into the hot skillet, then put it into a hot oven.

Hi Rik, I was watching this video, and had a idea. When you greased your tin and put in your parchment paper, do you think using a couple of bulldog clips, would help stop the parchment paper from blowing around. I have had the exact same problem with the fan, either using foil to cover a cake, or parchment paper like yourself. Just an idea👍

As a native of the American South, I have Opinions about adding sugar to cornbread, let alone wheat flour. I will reluctantly add as much as a tablespoon of sugar for my Northern inlaws, but a quarter cup for this amount of batter is edging firmly into cake territory.

That is called cornbread cake by some. Try it baked in a cast iron skillet preheated at 400 in the oven. Add a good chunk of butter to the hot skillet a soon as it's melted add your batter. It should start to fry the edges. Put it back in the oven and bake. Many will find the crisp edges tasty especially with a bowl of chili or for breakfast with sorghum molasses.

Sugar, besides the sweetness, provides a great texture. If you don’t add sugar, you are going to end up with a different texture, likely more heavy and even gummy. So you need to make up for the lack of sugar with something else.

I was thinking "Bait bun" or "baitong bun" is a popular snack in Taiwan, but it might be a mistranslation or confusion with "Baozi" (steamed buns) or other Taiwanese bread varieties. Then I thought it could be referring to a specific Taiwanese-style bun that includes fillings like pork, pickled vegetables, and sauces, commonly sold in night markets or bakeries. Why remove the crust? Esthetics? I happen to like the crust, it has the richest flavor. I prefer a sweeter corn bread, too. I first encountered corn bread at school (U.S. high school) where it was served for breakfast, with table syrup on the side. That's still my preferred mode.
