Add a can of creamed corn and a can of drained and chopped green chilies. Adds some sweet and heat. I always get asked to bring cornbread to chili dinners or chili contests in my area. So easy to make multiple batches with a great base recipe like yours. I just double it, add two cans creamed corn and 2 tablespoons (30 gms) of extra sugar. The two cans of drained and chopped green chilies are optional. I usually end up making both plain cornbread and green chili cornbread. Some like a little spice and some don’t.

Swap out the buttermilk with beer milk stout, makes it a whole different taste as well.

I didn't think any Brits liked cornbread! I'm shocked! If you like cornbread, you should really try corn pudding.....although I think that may be a bridge too far for most Europeans. Unless you're Dutch or German, they love American food lol

Thank you Rik. I am amazed at how people can watch your videos and still misunderstand what you say. I clearly heard you say, you were not getting rid of the crusts but saving them for another recipe. 🤦‍♂️🤷‍♂️ I am in anticipation of what it will be, really like this one though will be using it soon and often.

Oooh, this is very timely. I bought a kilo of cornmeal the other day, just on a whim. I have no idea why? I've never used it before. It just seemed like the right thing to do when I spotted it. Now I know why! Thanks for this.

@incanada83 that made me smile 😃 I've spotted things in the supermarket that I haven't seen or thought of since I was a child. I bought two bags of semolina recently but walked away when I saw salt cod on the shelf. I hadn't seen that since the 1970's!

@@liammalarky3483 Thanks 🌼 I'm giggling about semolina. Bought that too. Learning to make homemade pasta dough (came out hard as a cider block, it would make good self defense tool LOL). I do see salted cod but wouldn't have a clue how to use it. It looks like bunch of stiff flat pieces of unwanted wood 🤭Usually unwrapped, and in a basket. That is, if we're talking about the same salt cod 😁

You would have done so great with a Southern restaurant in the US. Some pinto beans cooked with a hamhock,fried potatoes,fried okra, your cornbread and a big slice of sweet Vidalia onion and of course a big glass of sweet iced tea . Perfect comfort meal. Thank you for your recipes where I can go into my kitchen and have everything I need on hand. I don't need recipes that you have to go to the grocery store for some exotic ingredients. Thanks ever so much.

You can leave the sugar out. I only add about a teaspoon to counter the taste of baking soda.

Quick and easy, I put buttermilk into my Xmas cakes, it makes All the difference to the texture of many cakes. Looks delicious xxx especially with some fresh cream!

Love cornbread especially with chili. I also bake it on top of shepherd pie instead of potatoes. Another way to make cornbread is honey top cornbread. I bake about 1/2 the recommended time then give the top a really good drizzle of honey all over the top then finish the bake. Cheers

Thanks Rik, this is a really nice recipe. I can't believe people still use that Jiffy mix in a box. I bought it once, tried it, and tossed it to the chickens. It was waaaayyy too sweet and tasted like chemicals. Homemade is always better!

I make cornbread without flour and only a teaspoon of sugar. 2 cups of cornmeal, 2 beaten eggs, 2 teaspoons of baking powder, 2 tablespoons of oil or melted bacon grease, 1 cup buttermilk, 1 teaspoon salt, 1/2 teaspoon of sugar. Combine dry ingredients and add milk and eggs. Heat the oil in a cast iron skillet, swirl around the skillet to coat the bottom and sides, then add to the batter and stir it in quickly. Pour into the hot skillet, then put it into a hot oven.

Real similar to what I make- no sugar. It makes a difference what kind of cornmeal you can get. I like heritage stone ground stuff.

Hi Rik, I was watching this video, and had a idea. When you greased your tin and put in your parchment paper, do you think using a couple of bulldog clips, would help stop the parchment paper from blowing around. I have had the exact same problem with the fan, either using foil to cover a cake, or parchment paper like yourself. Just an idea👍

When they say don't over mix... They mean don't mix until the flour becomes very glutenous like sandwich bread. Just stir enough to keep it light and fluffy. 💕🌞🌵😷

As a native of the American South, I have Opinions about adding sugar to cornbread, let alone wheat flour. I will reluctantly add as much as a tablespoon of sugar for my Northern inlaws, but a quarter cup for this amount of batter is edging firmly into cake territory.

That is called cornbread cake by some. Try it baked in a cast iron skillet preheated at 400 in the oven. Add a good chunk of butter to the hot skillet a soon as it's melted add your batter. It should start to fry the edges. Put it back in the oven and bake. Many will find the crisp edges tasty especially with a bowl of chili or for breakfast with sorghum molasses.

Sugar, besides the sweetness, provides a great texture. If you don’t add sugar, you are going to end up with a different texture, likely more heavy and even gummy. So you need to make up for the lack of sugar with something else.

I have seen fine cornmeal in Asda, Morrisons, Sainsburys and Tesco. Just type fine corn meal UK in google and you will see it.

I can understand why in England you would take off the crust because of those little crustless sandwiches that are popular with tea over there but in America we NEVER take the crust off of corn bread that's the best part!

@@CindyCockerham My maternal grandfather was firmly in the "I want cornBREAD not cake" camp and my grandmother was in the "sugar is essential" camp. Yes, it's the real reason the South lost the Civil War ... infighting over whether to use sugar or not.

Sorry Rik, bao bun was not a trick question. I saw this advert with these buns which had fillings in them. I suppose they were a bit like a bun you get in McDonalds with one of their fillings. However, I thought you may know as you have lived out in the East etc. no disrespect on my part just curiosity. ❤️A

No need to apologise, the name threw me altogether. I was thinking "Bait bun" or "baitong bun" is a popular snack in Taiwan, but it might be a mistranslation or confusion with "Baozi" (steamed buns) or other Taiwanese bread varieties. Then I thought it could be referring to a specific Taiwanese-style bun that includes fillings like pork, pickled vegetables, and sauces, commonly sold in night markets or bakeries. Why remove the crust? Esthetics? I happen to like the crust, it has the richest flavor. I prefer a sweeter corn bread, too. I first encountered corn bread at school (U.S. high school) where it was served for breakfast, with table syrup on the side. That's still my preferred mode.
