Hi Larry! You can freeze these bread rolls! Just do everything the same and when you have the rolls in the pan ready for the last rise before baking, cover with plastic wrap and freeze. I did that and took them out the next day at 6am... its 3pm now and they are beautifully risen, ready to bake!

Hi Larry! I hope you had a lovely Thanksgiving yesterday. Well, I looked up freezing dinner rolls before baking, and apparently you can... According to King Arthur Flour. So I will give these a go... we will be eating a delayed Thanksgiving with MIL tomorrow, and hopefully when I take them out of the freezer in the morning, they will defrost and prove nicely before I bake them... will let you know. If this works well for me, I plan on making a full batch and freezing them in small amounts for future use.

I made these yesterday. Great success... I had trouble with the dough being too sticky to work with, even my stand mixer basically just turned the dough around a bit as it lay in a sticky mess in the bowl. I added a scatter of flour over it while trying to kneed. I did that a few times till it was about as like your dough's appearance at halfway through the kneeding process. Then I kneeded the dough a while longer until I felt it was much closer to how yours looked. I separated the dough by simply pinching off bits roughly the size of yours. Baked it and it all came out light and fluffy! I wonder if its because its warmer and dryer where you are, and right now overcast and a little humid ... but considering all that... and they Still rose beautifully, were so light and fluffy... I think this is a Wonderful recipe. Thank you!

As far as I can tell, plain flour is what we call All Purpose Flour. Bread flour has a little higher gluten. It works a little better for making bread. That being said, I think you can substitute APF for most recipes. 🤠
