As a single mum, I would make tuna casserole weekly to last us 2 days. Cheap, healthy, quick meal! If I didn't have rice I'd use Orzo pasta! Any left over veg! It's lovely in a baguette with melted cheese! Nom nom!

I'm a chef in the Army who is also a trained culinarian. This is the kind of food we cook and I'm glad to see another chef embracing the style. When I saw the ingredients, I was like "oh this is like a ratatouille!" It looks wonderful Chef -- you're mama took good care of you. You should make some chili-mac someday; it's one of our favorite dishes in the Army!

Hi Chef!!😊 This looks sooooooo good. I'm going to try it. I love anything with rice! Thank you for sharing your Moms memory with us. You should show us a picture of her someday. She surely must have been a very special person. May she rest in peace. For me, my grandparents were the cooks in the family. My grandfather used to make breaded and fried cardoons, meatballs, his own sausage, sauce. My grandmother was famous for her chicken soup, and home made cannolis filled with pastry cream. So many of their recipes I try to recreate, but no measurements or written recipes. If I could just bring them back for a week, it would be spent cooking, and writing down the recipes. I'd have to agree, 6 kids 2 adults in the 70s so dirt cheap was the way in our house , egg noodles, carrots , peas and mushroom soup then baked and if we were really really lucky we got bread crumbs on top baked with it 😊

What an amazing human being, concerned about cost for families... My boys are grown now, but for a long time I was a single mother, and I didn't know what I could make that was healthy when they were young. I wish I had JP to help me navigate good meals at the lowest cost. I really hope others that were in my situation are benefiting now. JP you are incredible.

Cucina Povera, or poverty kitchen, cooking is absolutely my favorite kind of cooking Chef! People with a limited budget make the best dishes! I'm not poor, now, but I live like I am! I love buying the little bags of small yellow and orange and red peppers! Totally worth it! If you don't have Harissa try Calabrian chili or Sambal / garlic-chili sauce!

You are a man with a wonderful soul. Thank you for teaching us to cook, and not just showing us recipes (though I appreciate the recipes, too). I make your pain de mie at least once a week. I cut it into slices, freeze it with parchment in-between so they don't stick, and keep my family stocked up on bread this way. We haven't had store bought bread in many months. My 9 year old also asks for creme patisserie on his strawberries now, something which would have made my mother laugh if I asked for it as a child 😂

i love this guy's recipes. i'm still making his cole slaw. my dad was french and also an outstanding cook. everything started with roux. he always cooked sunday dinner, the best meal of the week by far. the french accent brings fond memories of my childhood.

Yes, i make this leftover food without harissa, but parmesan or with any meat or chorizo, or all together, sometimes reduced white wine. I dont like it with fish. Nice video.
