Important note about aquafaba: Use unsalted chickpeas!! The liquid from salted chickpeas tends to carry the chickpea flavour over to your baked good, especially in something simple like this dough.

As a fellow 90's kid I also highly regarded the all mighty pop-tart. My Mom rarely got it for me, which only strengthened the allure. I'm about to have my first kid in a few weeks actually, so I'm sure this recipe will be very useful in the sorta-near future 🙂 I agree about the brown sugar pop tarts, I remember those being the best!

I have always buttered my Pop Tarts! My husband thinks it's odd, but I could never eat the dry crust at the unfrosted edges and I hated just tossing those bits. Melt tub butter is perfect for this.

I’m not sure but possibly. You can also just use a pastry cutter or some forks. Or freeze the butter for 20 minutes and then grate it? That’s what I do for biscuits.

Hmm. You could probably add a pinch of cinnamon to the dough to give it a graham cracker vibe. Then for the filling you could add some cornstarch to some chocolate syrup to thicken it up and makes some vegan marshmallow fluff. Top with the regular white icing and for the granules, maybe chocolate shavings or brown sugar mixed with cocoa powder?

I've been making pastry for decades now, and had an internship at a country-club with a pastry chef (just as background). There are things called pastry-cutters that are cheaper than a food processor (or you can even just use forks instead). However, to make a dough like this (which starts out very much like a pie dough, before adding the powdered sugar and aqua-faba) -- you don't really need any tools at all, besides your hands. Break up the chilled butter into small chunks (you can cut them if you like, I never bother and just break it apart by hand), and work them into the flour and powdered sugar mixture with your hands (constantly breaking it up into smaller parts). Eventually, they will form pea-sized beads a bit smaller than the ones shown in the video, (it won't take too long). Then, you just add the liquid to it, and your dough will come together -- no need for a food processor. Since you don't have a food processor, you'll want to make the beads smaller than in the video, and it will (of course) take a bit longer (but not too much time).

Nope! There’s a couple unfrosted ones that are, but the rest have gelatin, so not even vegetarian!
