6 T peanut butter 1T dark soy sauce 1 T rice wine vinegar 1t sesame oil 3T chili oil ~1” nob of grated Ginger 1 clove garlic grated Melt all together in a saucepan for about 3 min. Add 1-2T water as necessary to consistency Pour sauce on top of “Loads of” cooked Udon noodles. Mix in thinly sliced Spring onions and chilies, sesame seeds. Add some on top for presentation.

I have a recipe just like this passed down from my grandma, incredible comfort food. Always makes me feel warm and fuzzy, the nostalgia is also really potent. I miss her like crazy.

Keep some of the noodles starchy water instead of plain water for the sauce.

@@BenNeedsATheme4aDream The starchy water from the noodles will make the peanut sauce more silky and rich tasting without the calories from, say, butter.

@@larrysmith2638 Thats actually a very good idea. Add a cube of butter at the very end and maybe more of that chilli sauce and a bit of lime.

Finally! A recipe where I've actually got all of the ingredients to make the dish. I usually quit recipe videos half way through because I need Fenugreek, Daikon, Kohlrabi etc or a selection of spices and pastes that I don't have or can't even get. Will be making this tomorrow, cheers.

@@cherrymetha3185 I made it, and it was delicious. I added hot Chili Garlic Sauce instead of the oil and I garnished it with chili. I've made it three times already and now it's one of my favourite dishes.

Few Asian restaurants cook this dish. I had it last in Wash., DC in "Chinatown" in the 90's. It was called Dan Dan Noodles. Your recipe hits the nail on the head except they sprinkle crushed peanuts over the top.

In Taiwan a version of this is very popular - but noodle is chilled (even more addicting, try it!), sesame paste is used instead of peanut butter, and shredded cucumbers and carrots are added for crunchiness.

Jen Si maybe Tahini would work as well? I've developed a nut allergie as well and I was missing the nut taste soo much but then I discovered what a great alternative Tahini is :)

I'm asian and have never had peanut butter noodles but this is probably the most tastiest looking fusion noodles i've ever seen 🤤 looks like a perfect lunch box dish.

it's weird because I don't like peanut butter that much when it's in a sandwich or on toast. But I've roasted a whole chicken in peanut butter before and it was just amazing! Also, I'm incredibly jealous about your kitchen! I get serious kitchen envy sometimes haha.

I added lemon juice instead of rice wine vinegar and some cilantro to the sauce plus some chicken and beansprouts to the dish which made it even better! Fully recommend!

That’s a good idea! But part of the beauty of this recipe is that it’s accidentally vegan :( You shouldn’t support the meat industry. You should look at some chicken substitutes. There are so many, and chickens are treated so horribly. They have no legal protection like other animals so they can be slaughtered in any horrible way and no one will be held responsible. Try some vegan chicken or even tofu :))

Keep in mind that organic peanut butter usually has no sugar and is much thinner than brand name peanut butter. It will change the flavor profile and thickness of the sauce. Shouldn't be a problem, but be aware.

If your peanut butter is unsweetened, do add a tablespoon or so of honey. Adds immeasurably to the taste!

I added mushrooms in mine. They were dried mushrooms which I soaked in water and I used that water to loosen up the sauce and it gave it a subtle earthy flavor which I loved and I did follow the 3 tbsp chili oil, which I shouldn't have done, but I cut it back to 1 tbsp on my second attempt which turned out to be the perfect amount of heat. Thanks for the recipe, Donal! PS, NOT ALL CHILI OIL BRANDS ARE CREATED EQUAL. LEARNED THAT THE HARD WAY FOLKS

Serve this chilled, add shredded cucumbers and carrots. Makes a wonderful salad noodle for the summer.

This is a really nice basic satay recipe :). I like using fish sauce instead of the soy sauce too.

Its seems like this dish is combination of Indonesian, Thai, Chinese & Japanese influence - in terms of ingredients used yet the way its combined is very Western. Im pretty sure this is not a traditional asian recipe ( im from singapore so our foods have east & west influences) but Im really in awe. Very creative! Cant wait to try it & i love the different variations mentioned in the comments section. 👍😊

You should try some veggie chicken substitutes. Chickens have no legal protection like other animals, so they can be slaughtered in any horrible way and no one will be held responsible. There’s so many other options. Try veggie chicken or even tofu :)

We Dutch have a history with Indonesia, so fried rice (nasi goreng) or noodles (bami goreng) with saté ayam and peanut sauce isn't a strange thing. Even a sunday regular. Try some coconut milk in the sauce. We even put peanut sauce on our fries, along with mayonaise and diced, raw onions. We call it patatje oorlog, or war fries, because it can make some in your belly 😅

Made this today Nov ‘23.. I cut back on the chili oil and used organic crunchy peanut butter. Well, should have used the right amount of chili oil and the cheaper peanut butter. It lacked a bit of kick and sweetness. Cheaper peanut butter has sugar. I’ll add maple syrup next time and more chili. I’ll also use the pasta water to thin and add cilantro and lime juice. I used udon noodles, I’m sure spaghetti would be fine esp served cold with some thin veggies mixed in -). Carrots, cucumber and etc

You can make chili oil at home. Just take any cheap cooking oil, mix in cheap chili power, and that’s it. For less than 25 cents you’ve got chili oil. #Gracias

Thank you. Wasn't sure what im going to do with all that rice wine vinegar, soy sauce etc that remains. I don't really use all that in my cooking generally so until i make this again...

my kids wouldn't believe me that this would be good.... made it. they now LOVE it. It's now in their lunches for tomorrow ( had to use soynut butter to make it 'school' friendly) Thanks for the reminder that peanut sauce is super easy and delish.

Same! I love crunchy. I like texture and think the peanuts add to the flavor. Of course I like creamy, but if I have crunchy you know I'm going to eat that up.

I do not like hot spices. However that is probably the most delicious recipe I have ever heard. And the chunky peanut butter is a great tip ❤. I have not tried this, but I cannot wait to try it. Great video.

Try to add palm sugar and tamarine to complete the flavour. In Indonesia, we have a dish called Gado-Gado Medan, and my favorite is to mix the noodle with the sauce which made from peanut. Its top notch!

Honestly, it may be the only channel that I subscribe to without having seen the video, so good job, this video is so great that, as a person who is first trying to finish all my 'unusual' ingredients before buying new ones, I feel like chili oil is a must-have in my kitchen now! I'm really looking forward to taste it!

I once made something similar, as a uni student being hungry and lazy haha, but just used peanut butter, soy sauce and siracha lol. I will definitely try yours, so yum!! Thanks Donald

I've made it with Sriracha when I didn't have chili oil or chili paste. Works fine.

Sauce, bring to a simmer.... 3:05 after melting loosen with 1-2tbspn water Chili oil optional hefty amt 3 tbspn Rice wine vinegar 1 tbspn Sesame oil 1 tspn Soy sauce 1 tbspn PB 6 tbspn Grate into sauce .... Ginger Garlic 1 clove ---- Noodle cook..... Udon noodle

This is quite similar to one of Chinese local foods Reganmian ( hot dry noodle), which is quite popular in Wuhan city, but in Wuhan's version,noodle is steamed on hot water, not boiled , therefore the taste is slightly different.

You can use thinner noodle as well, serve it cold in summer time with more sesame paste, less peanut butter. Miso soup goes well with this type of dish.

it's supposed to be a no no to stick chopsticks into a dish and have standing up. it is said to resemble the incense in a funeral pure. just a quick note. I will most definitely try this recipe with crunchy peanut butter of course. Thanks Donal

Karen is simply sharing what she knows and she is correct. I am asian and it is all about good manners and right conduct. It would not hurt to be aware. I mean if you do that in front of people who know about it being a no no, u end up exposing yourself as uncultured. It is very different from the new age PC we have where everything is an issue and everyone is offended. This one is rooted on age old tradition and etiquette.

I make a Chinese style dish similar to this, but I use Chinese black vinegar and sesame paste (I use less sesame paste and more chili oil than in the video) - I like to eat it with Chinese pickled mustard greens. This is just like one of my favourite vegan dishes ever, I first had in the 90s and would go all the way to Chinatown from Brooklyn to get this in NYC, bypassing many of my favourite vegan hotspots. There is nothing like the complex flavour! I miss it so much since moving abroad.

try with tahini instead of the pnb. Also, definitely use some of the pasta cooking water rather than fresh (cold?) water

I used to go to a restaurant called, "China First" on Clement St. in San Francisco. I always had their peanut noodles. Seemed to me like they had something in them--something like diced pickles (I am probably making a fool of myself by saying that). I couldn't get enough of them. I'm going to try your recipe over the weekend!
