6 T peanut butter 1T dark soy sauce 1 T rice wine vinegar 1t sesame oil 3T chili oil ~1” nob of grated Ginger 1 clove garlic grated Melt all together in a saucepan for about 3 min. Add 1-2T water as necessary to consistency Pour sauce on top of “Loads of” cooked Udon noodles. Mix in thinly sliced Spring onions and chilies, sesame seeds. Add some on top for presentation.

Few Asian restaurants cook this dish. I had it last in Wash., DC in "Chinatown" in the 90's. It was called Dan Dan Noodles. Your recipe hits the nail on the head except they sprinkle crushed peanuts over the top.

That’s a good idea! But part of the beauty of this recipe is that it’s accidentally vegan :( You shouldn’t support the meat industry. You should look at some chicken substitutes. There are so many, and chickens are treated so horribly. They have no legal protection like other animals so they can be slaughtered in any horrible way and no one will be held responsible. Try some vegan chicken or even tofu :))

Keep in mind that organic peanut butter usually has no sugar and is much thinner than brand name peanut butter. It will change the flavor profile and thickness of the sauce. Shouldn't be a problem, but be aware.

I added mushrooms in mine. They were dried mushrooms which I soaked in water and I used that water to loosen up the sauce and it gave it a subtle earthy flavor which I loved and I did follow the 3 tbsp chili oil, which I shouldn't have done, but I cut it back to 1 tbsp on my second attempt which turned out to be the perfect amount of heat. Its seems like this dish is combination of Indonesian, Thai, Chinese & Japanese influence - in terms of ingredients used yet the way its combined is very Western. Im pretty sure this is not a traditional asian recipe ( im from singapore so our foods have east & west influences) but Im really in awe. Very creative! We Dutch have a history with Indonesia, so fried rice (nasi goreng) or noodles (bami goreng) with saté ayam and peanut sauce isn't a strange thing. Even a sunday regular. Try some coconut milk in the sauce. We even put peanut sauce on our fries, along with mayonaise and diced, raw onions. We call it patatje oorlog, or war fries, because it can make some in your belly 😅

Made this today Nov ‘23.. I cut back on the chili oil and used organic crunchy peanut butter. Well, should have used the right amount of chili oil and the cheaper peanut butter. It lacked a bit of kick and sweetness. Cheaper peanut butter has sugar. I’ll add maple syrup next time and more chili. I’ll also use the pasta water to thin and add cilantro and lime juice. I used udon noodles, I’m sure spaghetti would be fine esp served cold with some thin veggies mixed in -). Carrots, cucumber and etc

You can make chili oil at home. Just take any cheap cooking oil, mix in cheap chili power, and that’s it. For less than 25 cents you’ve got chili oil. #Gracias

This is quite similar to one of Chinese local foods Reganmian ( hot dry noodle), which is quite popular in Wuhan city, but in Wuhan's version,noodle is steamed on hot water, not boiled , therefore the taste is slightly different.

You can use thinner noodle as well, serve it cold in summer time with more sesame paste, less peanut butter. Miso soup goes well with this type of dish.

it's supposed to be a no no to stick chopsticks into a dish and have standing up. it is said to resemble the incense in a funeral pure. just a quick note. I will most definitely try this recipe with crunchy peanut butter of course. Thanks Donal

Karen Daly only when you stick them in vertically in the center, at least In Japan most people rest their chopsticks like he did unless it's a super formal dinner event

Karen is simply sharing what she knows and she is correct. I am asian and it is all about good manners and right conduct. It would not hurt to be aware. I mean if you do that in front of people who know about it being a no no, u end up exposing yourself as uncultured. It is very different from the new age PC we have where everything is an issue and everyone is offended. This one is rooted on age old tradition and etiquette.

I make a Chinese style dish similar to this, but I use Chinese black vinegar and sesame paste (I use less sesame paste and more chili oil than in the video) - I like to eat it with Chinese pickled mustard greens. This is just like one of my favourite vegan dishes ever, I first had in the 90s and would go all the way to Chinatown from Brooklyn to get this in NYC, bypassing many of my favourite vegan hotspots. There is nothing like the complex flavour! I miss it so much since moving abroad.

try with tahini instead of the pnb. Also, definitely use some of the pasta cooking water rather than fresh (cold?) water

I used to go to a restaurant called, "China First" on Clement St. in San Francisco. I always had their peanut noodles. Seemed to me like they had something in them--something like diced pickles (I am probably making a fool of myself by saying that). I couldn't get enough of them. I'm going to try your recipe over the weekend!
