These sweet pickled eggs with beets is a favorite summer snack of mine. If you have an abundance of eggs, this may be a great way for you to use some of them up.
***RECIPE***
Ingredients
1 dozen eggs
1 cup of sugar
1 cup of apple cider vinager
1 cup of water
1 can of sliced beets
Directions
1. Boil and peel 1 dozen eggs
2. Place peeled eggs into a large jar
3. Combine in a saucepan, sugar, vinager, water and beets with juice.
4. Heat up combined ingredients, stirring occasionally until boiling.
5. Remove saucepan from heat and ladle into jar with eggs
6. Seal jar and refrigerate for 72 hours.
7. Enjoy the eggs and the beets. These should be good for several weeks if kept in the fridge.

Ok. I am a poultry farm gal. My daughter in law taught me this and it's never failed. After boiling and cooling, take a regular teaspoon (not a measuring spoon) tap wide end of egg where the air pocket is. Slip spoon in-between egg and shell with back or bottom of spoon facing out. Push spoon down as close to inside of shell as you can. Go to bottom, Repeat until all the shell is off. This makes the shell come off in long pieces instead of little pieces that stick to fingers and eggs. Rinse and enjoy.

My Mother was of Ukrainian descent. She used to pack these in our school lunches. I grew up on pickled eggs and ❤️ them. This is a great recipe much like my Mom’s. One more thing she made with the beets if she didn’t pickle them was a beet relish which we would eat with the eggs. It is delicious and easy to make. She would grind the canned beets and add ample sugar and a jar of Fresh horseradish. Now the key to this is to let it sit in a bowl covered in fridge for a day…stir and adjust sugar and horseradish to taste. We like it hot here . Cut your eggs in half and spoon a bit on top…..you will be amazed. Mom always served the relish with our Easter ham also. It is a sleeper recipe.

Oh wow that is awesome! I’ve never heard of that. Thank you so much for sharing. I’ll be sure to try it out. The horseradish seems like an odd twist. How strong is the horseradish taste supposed to be? I’m assuming a hint of it but just want to verify. I’m looking forward to trying it.

You’re welcome. You can add other vegetables to it you’d like to pickle as well. This is a good baseline for a sweeter pickled egg

I do a similar recipe, but put the beets in the jar with eggs in a lawyered fashion. Also- we add some cloves and cinnamon to the liquid while boiling. So glad I found your channel! We both work too and have a small " Farmlet". It can be done!

Take your fresh eggs wide end up and take a metal spoon and lightly tap it on the egg until you hear the sound change. This is forcing it to separate from the protective layer. Then cook cool how you would normally. I JUST learned this and it works beautifully!

Awesome possum! My mom used to make these for my dad many moons ago, God rest her weary soul, so, I am going to surprise him with some, he's turning 90 in 2 days! Shoot, I better get on it......😅

Haven't had the courage to try pickled eggs before, but seeing them with beets I have to admit, it looks pretty tasty! Never seen that done before but I'm now excited to try as I love beets. Thanks for sharing!

In Ohio, Taverns and Bars always keep them on counter for sale with crackers. I have been eating them at least 40 years.

For those who have an Instant Pot, I put whatever number of eggs in with the trivet under them, cook them on low pressure for 3 minutes and allow it to release the pressure on it's own. The eggs are perfect every time. Super easy to peel as well. Oftentimes, I have 2 pieces total of shell from one egg!

I'm sure you have received so many ways to boil and peel eggs. Mine use to look like yours. LOL! My son in law taught me a trick and it works. Don;t cool the eggs all the way. Try peeling your egg while they are still fairly warm. Works for me, so hopefully you'll get the same result.

Mom always added hard boiled eggs to the juice from her homemade beet pickles, so the brine made double duty, we ate the beet pickles then added the eggs and used it again. She used the Kerr canning guide beet pickle recipe substituting honey for sugar.

I followed pioneer woman’s recipe for hard boiled eggs. Drop eggs into boiling water. Ice bath after. Worked perfectly for us using farm eggs.

I been makin these kinda pickeled eggs at least one time each summer for bout 15 yrs and havent mad them in the last 2 summers cus i have been in an out of the hospital with neck and spinal fusion surgeries. Anyhows, im back to good now and i just got my eggs all hard boiled and peeled and for the life of me couldnt remember the sugar vinager water ratio lol so i looked it up real quick and your vid came up! I think i may have tried to over complicate the ratio cus as soon as u said it i was like OH YEAH, DUUUHHH lmfao🤣😂 anyhows thanks a bunch, i got my stuff on the stove heatin up to pour over my eggies soon!! I thought of making some chicken salad with one chopped up pickled, maybe two, eggs. I want to even throw in a couple of pickled quail eggs, finely chopped. I think it would be a crowd pleaser. Maybe a dash/dopple of Grey Poupon before it's folded together. 😋 Yum!

hey Stan great video never had them so I'm going to try it out not crazy about beets, so I'l try hot sauce ...ok the best way I found for hard boil eggs is in a Insta-pot so easy that pot is the hoot's for cooking the best way for corn beef and cabbage oh don't buy one of those high dollar one just plain jane works great stay safe give that little man a high five 4 me zeke

Many people aren’t. My daughter tries them every time and still isn’t a fan. I have an aunt though who goes crazy for them. Such a love hate food.

For farm fresh eggs bring water to boil. Take eggs out of fridge add them to boiling water boil for 13 minutes timed. For regular eggs. For small eggs like bantam 11 minutes . Put in ice bath for a few minutes. This works perfect every time I do it . Hope this helps.

This is the best way to peel eggs that I have yet found. I bring a pot of water to a rolling boil. I then add my just laid eggs (or eggs of any age) and let them boil for 14 minutes. I then drop them into a bowl of ice water and leave them for 20 minutes. After that I drain the ice water and roll each egg on a flat surface tp break the shell before peeling it. I previously tried the method shown in the video. That method works OK but the cool down time after boiling has top be longer. It works OK if the eggs cool down for about 15 minutes and then submerged in ice water for about 20 minutes. The first method does seem to work a lot better.

I used to peel them under running water, but someone recommended peeling under water in a bowl and I found that was the fastest and cleanest method of all. So next time leave your water-bath till the ice melts and just peel it in the same bowlful of water.

You know, I never heard of eggs with beets. To pickle them together sounded abit gross to me. But I just did a jar. And oh my! They are so beyond tasty! For me, they taste abit sweet n the sour from the vinegar. Very very good! I didn't change the recipe at all. My sister said there has to be pickling spices and all that. No!! Very good as is. Very simple n nice

I'm Sure as old as this video is its already been said, a fresh egg will always be difficult to peel. Store bought eggs are at least a month old. For the best peeling an egg has to be at least two weeks old, I believe the time allows the membrane to brake down or separate for desired results. I have also heard of a couple feeds reading to add lemon Rhinds or baking soda to the boiling solution. I've personally tried the lemon Rhinds and believe it does help.

Steam fresh eggs for 12-15 minutes and they peel perfectly every time!.

To make your eggs easier to peel crack the shell when adding to the cold water bath. That will allow the cold water to penetrate the shell and loosen the egg from the shell.

The only way I've ever hard "boiled" fresh eggs and they peel super easy, is to steam them for 20 mins. I promise, the shell will slide right off. After steaming, put eggs in cold water just until you can handle them and then peel. :)

I will second that! Instant pot or canning pot with a little water in the bottom below your eggs! If they don't peel steam them a little longer! (Farm fresh)

To peel an egg, use a thin metal table spoon. Crack egg at the bottom, then instead of using your fingers to peel, use the spoon to scoop the egg away from the shell. The idea is to get the spoon in between the shell membrane and the egg

Not sure if it will work on farm fresh.. but I seen a video awhile ago on how to get eggs pulled easy every time and it has never failed for me yet! Take a metal spoon and tap the butt (bigger park of the egg) gently until you hear it change sound. You'll hear a slight crack, egg isn't broken though. Don't hit it too hard.. sometimes it takes a few taps. It separated the membrane from the shell. They just pretty much fall off then!

I tap the big end before I put them intp the Uce water. What happens is a litter wter get under the shell which makes it easyer to peal.

I add about a handful of baking soda to the ice bath. Lightly crack the egg then put in ice bath. They will peel so much easier.

It's seems like a lot of people are making pickled eggs lately. I've never tasted them before. I would like to try them some time. I would hard boil my eggs in the Instapot. It only takes me 6 minutes. They also peel really easily.

Boiling eggs. Bring water to a boil add 1 TBS vegetable oil place eggs into boiling water and boil for 12 min then put the eggs into ice bath. Crack the eggs on a paper towel and roll with your palm to crack them all the way around. These peal perfect every time for me

Put the eggs in a covered jar with a little water then shake it. It works great!

Going to try this tonight. Easy peel eggs. Sit eggs out on counter at room temp for about 4 days to make them easier to peel. Test Eggs, If they float they are bad so discard them. Hard-boil Eggs- Start Eggs in cold water and bring to a boil and boil for 2 min. Remove from heat and cover pot for 15 min. Remove eggs and place in ice water for one minute, then place them back in the hot water for around 15 seconds then begin peeling under cold water.

Great video on pickled eggs Mr. Rocky Top. Funny thing: I had to pause the video and then when I started it again I said: Okay Mr. Rocky Top, I mean Mr. Rocky Creek. Anyway, I find it difficult to peel farm fresh eggs also. I think if you boil them and then put them in the fridge overnight it's easier to peel them. I didn't read the comments yet. Maybe somebody has a better idea. There is just no easy solution when they are so fresh.

I put salt & soda in my eggs to boil. No problem with peeling farm fresh eggs then. My granddaughter (8yrs old) could peel one beautifully in a matter of seconds. We had a contest of who could do it the fastest.😂

Do you have a Cosori? Or whatever the competitor is called too I guess. I do all our hard boiled in that now. Even the ones that are a day old from our chicks. They peel crazy easy! 3 minutes on the "vegie steam" button. Once it's done, I release the pressure with tongs and take the lid off. You can put them in ice water, but I have not yet. I just rinse them off with cold water if I want to peel right away. Crazy smooth! And others I throw in the fridge with peels on to eat for later.

You put water in the bottom and eggs on the steam tray insert; not on the bottom of the pan.

I don’t have one or a competitor brand. I may need to look into one. We’ve thought about getting something similar to make small meal prep quick and easy. Maybe we will stop thinking about it and actually get one soon. Thanks for the tip. My mom has one so maybe I can do a test run on hers.

@@RockyCreekHomestead Good idea with a test run too. I compared the Cosori to the other one. And chose the Cosori because of the different options. And it has proven solid so far - been about a year. We do a lot in it. I've gotten lazy and now make rice in that instead of stove top. Pot roast and corned beef (depends on weight) for 3/4 the set time and then adding in potatoes and carrots for 20 mins. I do hard boiled eggs every other day! LOL

Try bringing your water to a boil first then put your eggs in and boil for 13 minutes, immediately get them in cold running water till they are cold to the touch. Easiest peeling eggs you will ever have!

I boil my eggs in a Ninja instant cooker.Add 1 cup warm water to the cooker, put Trevit inside pot, put 7 eggs on Trevit seal lid.Cook 5 minutes let rest five minutes. Put cooked eggs into ice bath for 5 minutes and peel.I was shocked the first time I boiled my eggs in my ninja instant cooker the eggs were so easy to peel.

It’s adds a small amount of flavor. The combination of the sugar and vinager is what impacts the flavor more than anything.

Thank you for this recipe Now o have something for you… How to boil an egg that peels easily 🥚 Let eggs come to room temp ~10 minutes Bring water to a boil covered in a pan just enough that will cover the eggs Ladle the eggs into the boiling water Cover and bring back up to a boil (turn the heat down once it comes back up to rapid boil) Set timer for 13 minutes Take straight out if bowling water and put into an ice bath THIS ONE WORKS EVERY TIME NO MATTER THE AGE OF THE EGGS 🥚

I’d suspect you wouldn’t have to use sugar as some pickled egg recipes aren’t meant to be sweet. I like the sweetness so I’d suspect any sweetener could be used as long as dissolved well

Homemade pickled eggs I recommend refrigerating because they’re not packed with preservatives like grocery store eggs. You can adjust the sugar if you’d like. I prefer the sweet flavor profile in the warmer months. Some people do spicy versions which use less sugar. A little sugar is often good to help balance the tartness of the vinager.

On my tier list pickled eggs are 2nd behind dill cucumber. I like the sausages and bologna too. I'm not going to lie I have to cut it off with pigs feet I've been offered some with the toenails on it still on it pickled fat and toenails is a deal-breaker. 😂

Jently crack the eggs with a spoon as soon as they are boiled, then let em sit in that water till they're done. Wash with ice cold water - peel.

If you peel them under water warm the water pressure gets under the shell and takes it off in large parts.

I put cold water into the kettle with my 12-14 eggs. Set a timer for 20 minutes. When time is up, I pour off the hot water, rinse the boiled eggs in cold water, twice. Then in a third batch of cold water, I let the eggs set 5 minutes. Drain off the water a third time, let the eggs dry or dry them off with a paper towel. Then start peeling the eggs. I crack them all over the egg, lightly, then the shells are easy to pull off the eggs. After that, I place the peeled eggs into a bowl and am ready to start with the recipe for pickled eggs.

Ok I'm making them today with my usual tweaks. Fresh beets not canned. I'll peel and cook down on stove so there is juice. I hate ALL canned vegetables. Since I'm a diabetic I'm using Monk fruit instead of sugar. It doesn't spike insulin . Here I go, very healthy. My mom use to make them, I just never thought of it. Ive always ran the eggs under cold water. And the shells come off easier. Crack top and bottom. Trying to get the water between the egg and the shell. Easy pesy.

i think if you gor from hot to cold right away it makes it easier to peal.. over cooking will also make them harder to peal

I’ve done it both ways. This particular batch was canned beets. I’ve cut fresh as well and they came out just as good. It’s just matter of what I have on hand or time of year.

I poke a tiny (pin dot) hole in the pointy end of the egg before boiling... the eggs practically peel themselves! I saw it on a KZbin video and have been doing it ever since

Farm eggs put small pinhole in large end of egg it allows air sack to escape and release membrane to pull away when peeling .put in water with salt and follow your recipe. Hope this helps 🙏

the pinhole works very well... learned it from my grandma,,, she use d an Eisenhower campaign button to poke the holes.. She keot the campaign pin stuck in her kitchen window curtain.

These are red beet eggs. Pickled eggs just use vinegar, sugar and water. Food color if desired.

I know this video is 2 years old but if you see this you need to add at least 1 quarter of a cup of salt to your water before boiling eggs. The salt never gets in the eggs but it makes the eggs easy to peel. After putting eggs in cold water for about 5 minutes, crack the egg and roll the egg in your hands to loosen membrane. Then peel.

So I'll give you my super secret egg peeling trick and it works on all eggs I do it with an air compressor I get about 40PSI maybe 50PSI in the air compressor with a fine point air gun and you pick a piece of the shell off and crack the shell off you know and then you sway the air in kind of parallel with the surface of the egg between the shell and what it does basically is the air runs around the egg between the egg and the shell and breaks it loose of the shell making it not stick I know one guy who uses canola oil and he cracks all the shells and you know picks me so that you can get so that the oil can get in there and he'll just leave him sit for 45 minutes or something like that and then he'll go and peel him and he never has a problem except for your hands get all oily

Boil your water first then place your eggs in the boiling water. This causes the egg to start cooking immediately therefore not giving the membrane time to adhere to the egg.
