Because it's new. The ones run by old people are worn out over the years, which IMO adds charm and character to those stalls. Makes me think, "damn if it's been in use for that long, the food must be good"

So many yatai operators are elderly it's depressing; it gives the impression of a dying tradition preserved by people with nothing else to do. Seeing a younger guy create his own gives me hope.

when i was travel to japan back in 2017, i always want to eat ramen from street ramen vendor like this, because i think there is no point to eat fancy ramen at shopping mall or fancy restaurant, this is the real japan cuisine, street food!

Like he said he already owns a restaurant (izikaya that serves grilled meat and drinks if my Japanese doesn’t fail me lol) and wanted to be proactive not on the defense because of the virus. Costs are considerably lower for this cart so I suspect he’ll make it work until things open back up someday.

The Dad's wonderfully crafted Yatai made the set up not as time consuming as you notice the cooker is built-in the cart. And the wood, back wall, cabinets are the cleanest I've seen. Many people will pay him to build it.

Lol, in this 3rd world land I could never trust the stalls for cleanliness anymore because an irresponsible vendor of chicken intestines that I always went to because of cheapness had me taking long term medications for fecal parasites up to this day.

@@eujiinong2086 Im from philippines. 3rd world. In theory, food is always cleaner to eat in developed countries, which much of the world isnt. However theres also several articles where scientists have been interviewed and apparently they "admit" that most of the time, intestines could never be fully cleaned inside out meaning youre always risking consuming animal shtt, and you'd be lucky if youre able to taste the mud and you can spit it out right before swallowing. In all honesty I think you might already have it without knowing, because I already got infested even though I never ate intestines that tasted bitter (which IS the taste of the animal feces)

I been in Japan for 4 weeks, eat ramen everywhere about 5 times a week, and this is the ramen with the most meats that I ever seen, 4 pieces of THICK meat.
