Rachel Khoo's Roast Carrot Soup

This is one of my absolute favourite dishes to make and is one I turn to throughout the year, so I thought I'd share my recipe with you all.
I like to roast my carrots, before turning them into soup - and serve it with a yummy parsley ricotta. Delicious!

I made this for my daughter who is away at college (UF) and she loved it!! I divided it up into individual serving sizes, put into ziploc bags, froze it and stalked her fridge with it. It worked really well!! Yummy. Thank you. Love your channel!

I've made carrot soup before, but never thought of roasting the carrots first. I am going to have to try this. And, with the ricotta parsley, oh yum!

Its the beginning of winter for us in Melbourne. This soup was delicious and so comforting on a cold Sunday evening. The cumin brings on a special flavour. Just loved it ! Yummm Yummm Yummm - Thank you Rachel !!!

this is my little brother's favourite soup!! he goes mad for anything to do with carrots ahah. Also, I always love the clothes that rachel wears - v. simple and feminine. I think I need to invest in a few more pieces like hers :)

OK, but have you ever thought of saving carrot peels to make stock? I'm assuming it can be done if you wash the carrot first.

Made it & found it to be quite a horrible tasting soup. I could NEVER recommend this recipe to anyone.
