Rachel, I've cooked for a lot of years (I'm almost 82). I have made this dish before. I watched this whole episode. I just so happened to have these ingredients so I tackled Rachel's recipe!! I did not flavor mine too much; I shared with a dear friend who can't deal with herbs and spices... so it was Pepper and Salt with a pinch of Paprika!! I loved several things about yours... big chix rolls to slice after baking/done, rolling with plastic wrap...a great technique, and the Dijon Mustard, and frying/browning first before baking. Mine came out delicious, but messy, not as neat and "tucked in" as yours, but "delicious"!! I subscribed a while back and am catching up watching all your episodes/recipes. Love your style of teaching... I love Chile Rellenos... will tackle those one day... I liked the burning peppers and peeling with the side of the fork... a lot easier than picking with fingers. Thanks so much for passing on your knowledge and techniques!! 😊 ♡D

I can just repeat Lucy's message! The only thing I would had is that I love your haircut. And to see someone with hair like yours cooking is refreshing because so many have long hair they don't put it back away from their face. But then again I came from working in a resort when I was young where we have to wear stupid hair nets. LOL

I did it. The chicken cordon bleu was a hit. That sauce made the dish. Such a beautiful dish. My mom is 95 and she really enjoyed it. You’re a fabulous teacher and illustrator. Tip. Use boneless skinless chicken thighs for stuffed chicken. depending on size pound them thin. one or two together and season and stuff for Cordon or parm. Roll together secure with tooth pick, dip in seasoned egg and then roll in Italian bread crumbs. Then bake. Make white sauce or red sauce for parmed. Thighes are more moist and a bit cheaper.

@@andreefaist9401 Chicken Fat is a truely a strong antibiotic. Why it is so important in chicken soup. A lot of poor science from Big Pharma. Buy organic free range if you can. Much of what came in our meats in the sixties like growth hormones, antibiotics, etc is what is killing us.

There is a great book titled The cholesterol myth. Dental health is heart health. It is plaque that loves cholesterol that plugs our arteries after it sealed weakening arteries until they are healed. Calcium hardens our arteries. Probably from drinking soda that leeches calcium from our bones. I blame the AMA and soda makers.

American chicken breasts often seem a lot bigger than our European examples - I'm guessing they use a different breed of bird. For Europeans: 400°F is very near to 200°C.

I buy them in our local T****'s, but doubt their freshness, as they splash straight across the frying pan. A really fresh egg (even non-free-range) is not watery, and 'sits up' in its little gelatinous mound. Makes you wonder just what we are buying sometimes...

Thank you for this recipe. I did make it today. I made five rolls. I wouldn’t call this recipe easy because it was time consuming and required 3-4 steps before getting it to oven. However, I did enjoy making it and it was delicious. The sauce was wonderful!

Loved this recipe, thanks for sharing - I cooked it the other day and overcooked one side while frying it. But the recipe still came out wonderful. I added it to my go-to recipes. I used a slightly different sauce adding some parmesan. My wife loved it!! Though I did make a mess of the Kitchen. Just finished typing up the whole recipe to make again in the future.

Hi Rachel, Thank you for all your easy to follow recipes. Thank you for washing your hands in between touching the chicken, I love that. I've watched so many cooking videos where people touch raw meat then touch everything eles without washing their hands and I could never understand why they do that 😱 As a home cook I'm constantly washing my hands and cleaning my area when I cook, my mom raised me to clean as you cook so the dishes and kitchen don't become a total mess, I'm so glad that she taught me this 👏🏽 Thanks Rachel have a blessed day ❤️ 🙏🏽 Btw I make your enchilada sauce everytime I make enchiladas it's easy and the best ❤️

Thank you so much Rachel!! You always have great tips in your cooking demos. My cordon blue recipe just has you slice the breast and then use tooth picks to hold everything in...about 40% effective..you lose a lot of the cheese. You way of pounding and rolling makes so much more sense and is obviously successful. I can't wait to make this version!!! 😊 P.S. I love the clocks in the background, reminds me of my beloved Auntie's house when I stay for a visit with her!🥰

You should have rolled it the opposite way so that the cheese and ham were throughout the whole wrap instead of just in the center. Looks delicious.
