Parboiled rice is called converted in the States. I think it has more flavor as well as the vitamins from the bran but it’s best to try to find it as Mexican “super arroz” - Uncle Ben’s indestructible version (restaurants love it) cooks up like pencil erasers. Hinode has very good extra long grain brown rice that cooks up tender and almost fluffy- I think I’ll try that when I get some more frozen coconut milk. The things we have to go through to faithfully replicate your delicious, found nowhere else, recipes here- and worth every bit!

I don’t see where it says how many cups of cocunut milk you used. You said that you use 4 to 6 cups of water with the coconut when you blended it how many cups of coconut milk did it render?

Will the dish be too starchy if you don't wash the rice? That's how my gramma used to do it
@RacquelsCaribbeanCuisine
@RacquelsCaribbeanCuisine 6 ай бұрын
I have never not wash my rice before cooking, washing not only remove some of the starch but also dirt, dust, debris and chemicals, so yes I believe it will be more starchy if not wash.
