Parboiled rice is called converted in the States. I think it has more flavor as well as the vitamins from the bran but it’s best to try to find it as Mexican “super arroz” - Uncle Ben’s indestructible version (restaurants love it) cooks up like pencil erasers. Hinode has very good extra long grain brown rice that cooks up tender and almost fluffy- I think I’ll try that when I get some more frozen coconut milk. The things we have to go through to faithfully replicate your delicious, found nowhere else, recipes here- and worth every bit!

I have never not wash my rice before cooking, washing not only remove some of the starch but also dirt, dust, debris and chemicals, so yes I believe it will be more starchy if not wash.
