amazing video!!! used this technique today for my daughter's birthday cake and it is so easy and turns out soooo fancy and elaborate looking!! wraping the icing in plastic wrap and changing each sausage-like bag once you run out of icing is a game changer!!! i think i will use that for every icing from now on!! Amazing. Love it. For the bare spots between rosettes, you can use a star tip and place on each bare spot :)

Two suggestions. One. Try to use a thicker cake batter, either a different box cake or a sturdy homemade one. Two. When you were taking the caramelization off the edges of the cake. Just remove the top caramelization before layering and remove the side caramelization by carving it off with your template once the cake is stacked. (It lessens the steps 😋) I'm not a pro baker by any stretch but I've watched a looooot of cake videos and those are some tips I wanted to suggest. This cake is still stunning!! Good job!
